When we fall asleep, the blood supply to the internal organs like kidneys increase resulting in more urine production. Babies usually have liquids. These two are probably the reasons.

A young baby is likely to have just had a milk feed before it falls asleep, so that probably has something to do with it.
The digestion probably has taken place after everything he/she ate during the day.
