Easy Slow Cooker Recipes - Best Sausage Casserole Recipe for the Slow Cooker

Do you find you sometimes just don't have time to cook? Do you finish your working day and just want a nice hearty filling meal? Do you own a slow cooker? (If not you should!) Well this recipe is perfect for you!
This is probably one of the simplest and most filling recipes I have cooked for a while in my slow cooker. Plus its cheap and although not super healthy it is fairly good for you as contains very little fat and plenty of healthy ingredients. Its also great for trying to clear out your fridge or cupboard as you can easily add a few other ingredients to it if you want.
So this is based loosely on a Poor Man's Cassoulet recipe I found in one of my old slow cooker recipe books, but I have added my own touches and altered it a bit for my own tastes.
Believe me this one will be a big hit with the whole family. The recipe is for 2 but you can easily add more sausages and veg to make it enough for 4.
- 4 Sausages
- 3 Carrots, sliced
- 1 Yellow Onion, Diced
- 1 tin Kidney Beans, Drained and Rinsed
- 1tsp if lazy or 2 cloves Garlic, chopped (or lazy)
- 4 slices Smoked Bacon, Rindless and sliced
- 300ml Beef Stock (or other)
- small tin sweetcorn, drained
- Heat the garlic and onion in a pan with a little oil, add the bacon and sausages to the pan and cook for a few minutes, until sausages are just starting to brown.
- While sausage mix is cooking add the carrots, kidney beans and made up stock to the slow cooker and set to heat on low.
- Once the sausages have started to brown add the mix to the slow cooker and cover on low for 6-8 hours
- 30 minutes before you want to serve the meal add the tin of sweetcorn and stir well. Replace lid and leave for last 30 minutes
- Serve over rice or with potatoes for a filling hearty meal!
- I added carrots as they happened to be the vegetable I had in the house at the time, you could just as easily add potatoes to the dish or any other root veg.
- Kidney beans can be replaced with Haricot beans, black eyed beans or a mixture of beans.
- If you chopped up the sausage into chunks this could be served as a thick stew with a nice piece of crusty bread instead.
- This can also be made as a crock pot freezer meal, just cook all the meat and onions before placing it all in a freezer bag with the other ingredients and the stock and freeze. Pull out the night before and let thaw a little, then bung it in in the morning. Sorted!
