"Fried hot water cornbread with bacon bits"

"Fried hot water cornbread"
Ingredients:
2 cups corn meal
1/2 tsp. salt
1/2 cup bacon crush pieces (optiona)
1 tsp.baking powder
3 cups boiling water
1 cup canola oil
Directions:
Put 3 cups cup water in pot and heat to boiling point. Then pour on to corn meal and slowly mix together until it forms a coen meal ball. you do not have to us all water if not needed.
Put on cast iron skillet and pou cup oil in skillet turn heat onto medium and let grease get real hot.
Put 1 cup water in a cerael bowl to damp you hand after you make each corn meal patty with your hands. put a ball of meal dough in your hand the size of a medium peach, shape into a corn meal patty and put in skillet. add more corn meal patties until all the meal is used up. Fry corn meal patties until they are crunchy and golden brown on both sides. place cooked corn meal patties on Double paper towe,l to pull some of the oil away. juat eating these hot corn meal patties alone is a tasty and crunchy treat.

when i first saw this recipe and saw the amount of oil being used i thought it was a misprint until i realized that this isn't baked.....we use to add cracklin to ours but i guess if it is being fried the bacon will do much better.i appreciate this recipe because i can just fry up enough for me instead of baking a whole pan, since i am the only one eating cornbread because everyone else dose biscuits....i'll be trying this this week.....thx much
