Family & Friends

Labor Day is a day that is set aside as a National Holiday. One of the things that I think about when I think of Labor Day is, spending time with family and/or friends. When all of the family gets together, there will be grilling of some kind at some point.

There are certain recipes that seem appropriate for each holiday and grilling recipes seem to come to mind when I think of Labor Day. I am going to include some of my family's favorites.

When my grandfather was still living, we would go fishing, usually at someone's private pond and then go back to the house and cook the fish. He might even have fish already prepared to cook from a previous fishing trip. Having a fish fry on Labor Day was a tradition of my family's while I was growing up.

I am going to include some recipes that would be typical of what I would fix for a Labor Day party. I hope that you find this hub helpful. A couple of these recipes, sound like they would be great!

For the kids, you might want to serve hamburgers as well as hot dogs with french fries or potato chips, just in case they don't like ribs. Also, we really enjoy grilled sausages. They are great to just toss on the grill as well.

Baby Back Ribs

What would a back yard party be without some ribs on the grill?

Ingredients

2 slabs baby back ribs 4-5 lbs.

3 tablespoons dry spices

1 cup basting sauce

1 cup sweet sauce


Instructions

First, you will want to place the ribs in a shallow baking pan. Rub the dry spices all over the ribs. Cover and refrigerate ribs three hours or overnight prior to cooking. Cook in rotisserie oven for 15-30 minutes, basting occasionally. Then, brush the ribs with the sweet sauce during the last 30 minutes of cooking time.

Nutrition

3 tablespoons paprika

2 teaspoons seasoned salt

2 teaspoons black pepper

2 teaspoons garlic powder

1 teaspoon red pepper

1 teaspoon ground oregano

1 teaspoon dry mustard

1/2 teaspoon chili powder


Instructions


Combine all ingredients stir well.

Ingredients


1/4 cup brown sugar

1 tablespoon dry spices

1/2 cup red wine vinegar

1/8 cup worcestershire sauce

1/2 teaspoon hot sauce

1 small bay leaf


Instructions


Combine all ingredients. Cover and let stand for 8 hours.

Ingredients

1 (8 oz.) can tomato sauce

1/2 cup spicy honey mustard

1 cup catsup

1/2 cup red wine vinegar

2 tablespoons brown sugar

1 tablespoon paprika

1 tablespoon seasoned salt

1 /12 teaspoons garlic powder

1/8 cup worcestershire sauce

1/8 teaspoon chili powder

1/4 cup butter

1/8 teaspoon red pepper

2 tablespoons hot sauce

1/8 teaspoon black pepper

1 tablespoon lemon juice


Instructions


Combine all ingredients in a dutch oven. Bring the mixture to a boil. Reduce the heat to medium-low and simmer for 30 minutes, stirring occasionally.

What about those sides?

Ok, you've got your meat and you've got your dessert so now, let's talk about some side dishes that would be good to serve alongside the ribs. One thing that I believe that you can't go wrong with is potatoes. This ingredient is very versatile and can be very easily prepared. Most people like potatoes and they are fairly easy to prepare. This is a perfect side dish to go with the ribs.

The recipe that I want to share with you is called:

Creamy Mashed Potato Bake


3 cups mashed potatoes

1 cup sour cream

1/4 teaspoon garlic powder

1 1/3 cups french's fried onions

1 cup shredded cheddar cheese

Instructions


Combine mashed potatoes, sour cream, milk and garlic powder. Spoon half of the mixture into a two quart casserole. Sprinkle with 2/3 cup fried onions and 1/2 cup of the cheddar cheese. Top with the remaining potato mixture. Bake 30 minutes at 350 degrees or until hot. Top with the remaining onions and cheese. Bake for 5 minutes.



Simple But Tasty Salad

A simple salad with lettuce, tomatoes and carrots is a delicious treat to serve to your guests just before the main course is ready.

Simple Salad

To fix a simple salad, I would just fix the equivalent of a house salad. Just take a large bowl and shred some lettuce, then just add whatever you like in your salad. Some suggestions would be bell pepper, mushrooms, tomatoes, carrots, cauliflower, broccoli. If you like eggs, you could boil one or two and add them to the salad. You can also add bacon bits to the top of your salad.

Another idea that I have for salad is a twist on some ingredients that you might not think of pairing together in a recipe. It is not a true salad, it is cole slaw. Cole slaw goes great with fish but, it also goes very well with ribs.

Here is that unique recipe. I hope that you enjoy.


Crunchy Cole Slaw


Dressing: You will want to make the dressing one day ahead and place it in the fridge. I would like to suggest that you put the mixture in a glass jar with a tight fitting lid.

1 cup oil

4 tablespoons vinegar (recipe calls for rice vinegar)

1 teaspoon salt

3/4 cup sugar

Crunchies


Put together the following:

Toast ahead of time for 3 minutes at 350 degrees. Then, set aside.

4 teaspoon sesame seeds

1 cup slivered almonds

2 packages of ramen noodles-crush up the noodles into pieces (save the seasoning packet from the noodles for another use).


2 large bags of coleslaw or 1 head of cabbage, chopped

In a bowl, place the coleslaw and crunchies. Then, right before serving, shake the dressing well. You will want to make sure the dressing is really mixed up well. After the dressing is mixed up very well you can then pour it over the salad. Toss the greens with the dressing and crunchies.

This crunchy cole slaw is not really good the next day. The noodles and crunchies in the cole slaw absorb the dressing and they are soggy the next day.

Lemon Mousse

This is a great lemony dessert that has a cool refreshing taste. The lemon in this dessert is not too strong. It is perfect, lemon flavor. This dessert that I am about to share with you is a special one. It is courtesy of my mom. It might be the easiest dessert that you will ever make. I hope that you will be making this dessert for years to come. Please feel free to share this recipe with your family and friends.

Ingredients


1 large can evaporated milk

1 cup sugar

2 lemons

graham cracker crumbs (enough for a pan or the container that you are putting the mousse in)


Instructions


First you will want to empty the evaporated milk in a large mixing bowl. Chill this mixture until it's partially frozen. You will just have to test out your freezer (since each one is so different). Than you can add the sugar slowly and add the lemon juice. Use a small hand held mixer to make sure that it is mixed up well. Then you will need to line your container with graham cracker crumbs. Make sure that your container is freezer safe. Then, pour the mousse over the top. Freeze completely before serving.
