SINDHI KADHI

A typical Sindhi kadhi recipe made with gram flour, vegetables, and spices.

Ingredients

  • 4 tbsp Gram flour (besan)
  • 2 Potatoes, (cubed)
  • 2 Tomatoes, (chopped)
  • 1 Carrot, (cubed)
  • 2 Green chillies, (chopped)
  • 1/2 tsp Cumin seeds
  • 1/2 tsp Fenugreek seeds
  • 1/4 tsp Asafoetida
  • 1/2 tsp Red chilli powder
  • Salt to taste
  • 1/2 tsp turmeric powder
  • 3 tbsp Sunflower oil
  • Fresh chopped coriander, (for garnishing)
  • 1 tbsp Tamarind paste

COOK TIME

Prep time: 10 min
Cook time: 30 min
Ready in: 40 min
Yields: Serves 5 people
Saute gram flour (besan) in a heavy bottom pan

INSTRUCTIONS

  1. Heat oil in a heavy bottom pan. Add cumin seeds, fenugreek seeds and asafoetida. When they crackle add gram flour (besan) and saute for 5-6 mins over a medium heat until it is golden brown.
  2. Add 4 cups of water, cubed potatoes, cubed carrot, chopped green chilli, chopped tomatoes, salt, turmeric powder and red chilli powder and bring to a boil. Cover and simmer til the vegetables are cooked over a medium heat. Add tamarind paste.
  3. Garnish with chopped coriander and serve with rice.
