The 2 Main Cooking Techniques

Let me start with the basics, when it comes to cooking methods, there are two main cooking procedures ,Dry heat method and wet/moist heat cooking methods . Every cooking technique IE sauteing,grilling,boiling,braising,and searing , just to name a few fall into one or the other cooking methods. So what separates these two cooking methods? You might be asking your self this same question, but don’t fret I break down the methods below.

Wet Heat Cooking Methods

wet heat cooking methods consists of any typ of cooking that uses liquid. Lots of chef like infuse alcohol like vintage beers and wine when they steam, and boil different types of culinary products. Another great trick is that chefs will use various stalks to flavor the food that they are cooking with.

  • Baking
  • Sauteing
  • Broiling

  • deep frying


Oil and water do not mix, that is why when deep frying with fat may seem like a wet heat cooking method it is not. The dry heat cooking method is most common and is usually implemented by conducting heat thru an open flame on a grill or broiler,or the heat get transfers thru a vessel such as a saute pan, or sauce pot.

Things to Consider While Choosing a cooking method

Before you start cooking it is very wise to think about what it is you are trying to cook, and any other health concerns. The second thing a chef thinks about is cooking time and temperature, some cooking techniques such as braising can take multiple hours, where as grilling can take only a few short minutes.
