Whole Wheat Pumpkin Pancakes

 It's that time of year for  "pumpkin everything", and there are many ways besides carving up one for Halloween where that can happen. Keep in mind that canned pumpkin can be bought all year round , so you can treat your family to these tasty pancakes whenever your heart desires.


3/4 cup whole wheat flour

1 1/4 cups flour

3/4 cup brown sugar

4 tsp. baking powder

1/2 tsp. nutmeg

1 tsp. cinnamon

1/4 tsp allspice

1 1/2 cups canned pumpkin

1 cup milk

1/4 cup vegetable oil

3 Eggs

1 tsp. vanilla extract


Mix together all dry ingredients together in a large bowl. Add remaining ingredients until well blended. In a lightly buttered skillet heated to warm add 1/3 cup of batter to a medium heat. Cook until brown on bottom. Flip pancake over and repeat step until done. Yields about 12 pancakes.

      I have never had these! I will have to try them!! I wish I was more of a cook! I thought this recipe was awesome, so I added it to my hub on benefits of whole wheat! GREAT JOB!!!

      Those sound DELICIOUS! I'm going to have to try them with my fresh ground whole wheat. YUM!
