My goal was an inexpensive and healthy dinner salad. I decided on the Rainbow Salad. Using many colors vegetables has its benefits. I decided on red tomato salsa, orange bell peppers, yellow bell pepper, and green lettuce and cilantro. Maybe I will have blueberries for dessert!

I am a couponer and always have free salsa on hand. Today I took my own tip and went to the reduced produce area of my grocery store. I found a bag of 5 cucumbers for $0.25 and a bag of 6 yellow and orange peppers for $1.99. I decided to calculate the cost of my salad along with its nutritional information. My salad had 172 calories, 13 grams protein and cost me $0.59.

  • 1 cup iceberg lettuce, chopped
  • 2 Hardboiled eggs, sliced
  • 3 strips Yellow Bell Pepper, chopped
  • 3 strips Orange Bell Pepper, chopped
  • 3 slices cucumber, chopped
  • 1 tbsp cilantro, chopped
  • 2 tbsp Chi Chi's medium salsa

How To Assemble Rainbow Salad

  1. Chop Lettuce, peppers, cucumber and cilantro. Slice egg.
  2. Add ingredients over lettuce.

      Thanks for reading, avantitexan. I also got some yellow squash off the reduced rack and planned on making it again squash and zucchini. I am excited for my summer garden to get underway to have more, inexpensive options. Good luck with the heartburn! My husband wouldn't eat my salad for the same reason!
