Farewell to Sausages and other Meaty Nasties...

2018 has been announced as the Year of the Vegan, the year that veganism finally takes off, and other such exciting lauditory remarks. If you are really moved by the plight of "food animals" (i.e., those sentient beings chosen, by various cultures, to end up on the dining table), then you are likely looking at eating a vegan diet-- no animal products, including flesh, organs, milk, fats, eggs, and honey. Or, expressed in more positive terms, you are likely wanting to eat whole food, plant-based.

Merging With The Road Less Traveled

So, you want to go Vegan? And, if you're a family person, you want to have your whole family become vegan too!

Well, we know how that goes, don't we? Someone spends a whack of money on organic processed vegan chow, or stands over a bunch of extruder-juicer-blender appliances all day, and what do you hear from the other diners? "This tastes disgusting!" "Can't we just have that triple-cheese pizza that's in the freezer? There's no meat on it!" and "This is a very unhealthy way for a young person to eat-- no protein, no calcium!" And, you sort of agree with some of the debate, but you don't say so. Because you are a vegan, dammit!

So, you pick a really, truly delicious item that is a food favourite in your house-- pizza, ice cream, or chili, for example-- and you go to town in finding that one vegan recipe that gets a response from one of the hold-outs like: "Hey, this is pretty good-- I think I could actually get to like this." (Or maybe you are the only one, but you count, and you can be vegan by yourself!)

Delicious Vegan Sausage Recipes

Now, because you are still reading this, I assume that sausages of some kind have been a happy part of past breakfasts or barbecues or in a jambalaya or casserole for dinner! I am pleased to announce that one or more of the following five vegan sausage recipes will be your next favourite food-- and maybe even a top choice of one or more family member.

I am doing a quick review of each recipe to make it easier for you to select which one(s) you would like to try. The reviews are directly linked to the original recipes, so there won't be the toggling around that happens sometimes in Pinterest. And I will tell you whether the recipe is Gluten-based, Gluten-FREE, Soy-based or Soy-FREE. Here you go:

Vegan Sausage Patties-- Full Flavour, Less Work!

Vegan Sausage Patties

You can put these yummy little sausage patties together and fry them up in less than 20 minutes! The recipe contains both textured vegetable protein (Soy-Base) and wheat flour and wheat bran (Gluten-base). Flavoring ingredients include: Nutritional Yeast (cheesy-tasting. Note: NOT Brewer's Yeast) and Liquid Smoke (get a healthy variety in the Health Food section at your supermarket). Liquid Smoke is not carcinogenic. It is a delicious addition to various savory soups and other dishes to give it that je-ne-sais-quoi umami flavour that we sometimes associate with meat dishes. Most of the ingredients in this recipe you will use over and over again in other recipes, so they won't be things that just live in the back of your cupboard.

TIPS: Look to buy nutritional yeast in bulk from a good supplier. I choose to buy organic spices and avoid ingredients that might be grown in China, at this time. Store as much as possible (spices, liquids, oils, flours, grains) in air tight containers in a cool place, preferably the Fridge.

Firm "Designer"-Style Vegan Sausage

Firm "Designer" Vegan Sausage

This vegan Gluten-based very firm sausage is rated by the developer as "The World's Best Vegan Sausage," and would seem to stand up pretty well to the fancier store-bought vegan sausages (like Field's Roast, for which I pay a whopping $10 for 4 sausages. They are that good). They are definitely not a sausage for someone with Coeliac disease or gluten-sensitivity because the Vital Gluten* used in the recipe is ... um... vital to the recipe.

The recipe comes with a couple of variations in what spices are added: Italian style and Spicy Garlic. If you are looking for a soy-free recipe, this is the one! Instead of using Soy Sauce (standard to most sausage recipes to get the meaty-umam effect) the recipe calls for coconut aminos sauce. It has a similar zing to soy sauce. The coconut aminos are gluten-free, and very low glycemic, so a good choice for diabetics. See the ad below to learn more about Coconut Aminos.

TIPS: If you are no longer comfortable with pictures of meat, you will want to scroll quickly through the pictures at the top of the article of sausages from a Chinese market. *Vital Gluten is the protein from wheat devoid of any other of the wheat parts (such as the germ or the starch). If you want to, you can learn to make your own gluten protein, but it is a fairly arduous process and the recipe I recently looked at involved 8 cups of organic whole-wheat flour, which would probably be somewhat cheaper than buying the Vital Gluten, but not terribly much so.

Okay, so who doesn't miss sausage rolls? These tasty little vegan wrap-ups are a guilt-free delight (except maybe for the 'vegan butter' which is a fat that some of us are trying to avoid). Yes, they also are NOT gluten-free (witness the yummy puff pastry cover-up and Vital Gluten in the mix), but they are Soy-FREE. Cremini Mushrooms are called for (dark brown, the size of standard white mushrooms). If you wanted to use other mushrooms, like Baby Bellas, just use an equivalent amount. The ingredients in here make my mouth water just typing this up.

TIPS: Remember that you can play with the spices in any recipe-- it's YOUR food! Sometimes unusual spice combinations (like the fennel in this one) might either strike you as odd, or not appeal to you in the least-- either give it a try and risk being surprised, or switch up, or leave out, spices. I personally love kale and it grows all year in my garden, but if you don't, go for a green you do like, such as spinach, Chinese cabbage, or even minced broccoli. Enjoy!

This Vegan Carrot Hot Dog recipe published on the PETA site makes a great statement around the simplicity of going Vegan. Have you tried this weenie carrot yet? It honestly tastes just like a hot dog wiener. A healthy and cruelty-free alternative to old school wieners, the ingredients to make this are probably already in your cupboard (except, likely not the Liquid Smoke-- scroll above to read more in the Vegan Sausage Patties). Vegan Spicy Italian Sausages

Our final review of a vegan sausage recipe is the Spicy Italian Sausage, a Gluten-FREE recipe on the One Green Planet site. These cruelty-free sausages contain a lot of ingredients we likely already have on-hand, but also calls for smoked Paprika-which I am quite addicted to- Liquid Smoke (see above), Xanthan Gum (familiar to people who do gluten-free baking), sun-dried tomato paste and gluten-free, vegan Worcestershire Sauce.

TIP: Try some of the other less-ingredient dense sausage recipes above before giving this one a go, if you are on a fairly restrictive budget. Or not. You are the Chef. Have fun!
