1. Cilantro Lime Chicken
Stunningly tender chicken breasts with a refreshing lime marinade. So easy to make and will go down a treat even with the fussiest of eaters.
To maximize the flavors you want to tenderize the chicken meat as best you can then wrap the chicken into a ziplock bag with lime juice, cilantro, garlic powder, avocado oil, paprika and salt - and let it marinade for twenty minutes.
2. Chinese Chicken Salad
Again, so easy to make – just shred the chicken and put into bag with chopped veg and shake it all up in a bag!
3. Raw Zucchini Salad
Gorgreous raw zucchini salad made by cutting the zucchini into ‘strips’ like spaghetti - but without the pasta. (And I know there's gluten free pasta but even that can give me problems sometimes!)

Juicy meatballs with rosemary aioli and caramelized onions – bellissimo! To make these extra delish make sure you use fresh ground meat and get those onions nice and caramelized.

Sumptuous salmon crab burger with mustard sauce - less than 350 calories a serving and a great source of omega-3s.
8. Creamy Avocado Dip
Creamy avocado, artichoke & kale dip – whip this up in 15 mins for a really light, delicious, summer meal.
