2 Yummy Recipes For Distance Runners

Updated on October 12, 2014

Running affects every muscle in your body, and by running such large distances it even adds more stress to it. By fueling up with good hearty foods, it will help your runtime since you will have even more energy.

Vegetarian Linguine

- 1 box whole wheat linguine
- 1/3 cup of Choy
- 1/2 cup of vegetable oil
- 10 potatoes, chopped into cubes
- 10 snap peas
- 10 scallions cubed
- 1 cup sesame seeds
- 1 tablespoon of grated ginger
- 1 1/2 clove garlic
- 3 tablespoon soy sauce
- 1 tablespoon vinegar
- 2 tablespoon sesame oil
- 1/4 lemon juice
- 1/2 cup for water
- 2 tablespoons of sugar

In a large pot, add 8 cups of water until it reaches a boil. Add the linguine, peas, garlic, potatoes, and Choy. Let it simmer for 10 minutes. Drain water, but keep the food in the pot on a low temperature until you are ready to eat. Next, add the rest of the ingredients and stir.

Hardy Bean Soup (very yummy).

This recipient is my favorite. I've been making it since I was in middle school, running cross country. This keeps you full, so you won't have to worry about getting hungry right after you start your race.

- 4 tablespoons olive oil
- 1 tablespoon of fresh ground pepper
- 1 tablespoon of salt
- 1 large onion, chopped
- 3 medium cloves of garlic, chopped
- 1 teaspoon fresh thyme
- 4 fresh bay leaves
- 1/2 cups flour
- 2 1/2 cup cooking red wine
- 8 cups vegetable broth
- 4 cans white beans
- 1/2 cup chopped parsley
- 2 cups of potatoes

In a large pot, add all the ingredients and place on medium high for 45 minutes. This dish serves 4. I like to make extra then put it in a ziplock bag and put it in the freezer. It will last for six months. When you're ready to eat, just place in hot water, or defrost if your microwave has that capability.
