3 Easy Vegan Recipes For Dinner

Vegan Portobello Mushroom & Guacamole Burger


  • 1 Large Portobello Mushroom Per Burger
  • 1 Bag of Daiya Mozzarella Veggie Shred Cheese
  • 2 Organic Tomatoes - One Chopped & One Sliced
  • 1 Bag Of Spinach
  • 1 Jar Of Organic Earth Balance Mindful Mayo - Vegan Mayo
  • 1 Bag Of Whole Wheat Buns
  • 1/2 Cup Of Vinegar
  • 2 Large Organic Avocados
  • 1/4 Cup Of Cilantro
  • Johnny's Seasoning


Scoop out Avocados into a small mixing bowl. With a fork, mash the Avocados until creamy and then stir in Cilantro, Tomatoes, Salt, Pepper & Johnny's to taste.

Then in a pan, on medium heat, add Portobello Mushroom and cover with the Vinegar. Cover and cook for 5 minutes. Then gently flip over and cook for an additional 5 minutes. Add more vinegar as needed to prevent sticking & burning to the pan. Once Cooked, remove from heat, add Cheese (to top of Mushroom) and let melt in the pan.

Then you can add Mayo, Guacamole, Portobello Mushroom, Sliced Tomatoes and Spinach to the Bun!

Avocado Pesto Pasta with Sun-dried Tomato & Artichoke


  • 4 Avocados
  • 1 Lemon - For Juice
  • 1 Bunch Of Basil
  • 1 Can Of Artichoke Heart Quarters
  • 1 Jar Sun-dried Tomatoes
  • 1 1/2 Cups Of Cashews
  • 2 Cloves Of Garlic
  • 4 Tablespoons Of Olive Oil
  • 1 Package Angel Hair Pasta
  • Johnny's Seasoning
  • Salt & Pepper



  • In a large pot bring water to a boil and then add pasta (add a little oil to prevent sticking). Once pasta is soft, remove from heat & drain.

Pesto Sauce:

  • Combine in a blender lemon juice, basil, cashews, garlic, oil, salt & pepper. Blend till mixed into a sauce.
  • Then add pesto sauce into a large bowl and then add avocados and Johnny's. Squish avocados into the sauce until creamy.
  • Next add in chunks of sun-dried tomatoes & artichoke pieces.

Combine:In a bowl add pasta and then pesto sauce on top!


Spicy Buffalo Chick'n Sandwich


  • 1 Package Of Steak Rolls/Hoagie Buns - 6 in a package
  • 1 to 2 Package Gardein Mandarin Orange Crispy Chick'n - Chick'n Only Do Not Use
  • Sauce Packet
  • 1 sliced Tomato
  • 1 Jar Of Grapeseed Vegenaise Sandwich Spread
  • 1 Jar of Franks Redhot Thick Buffalo Sauce
  • Spinach
  • Johnny's Seasoning
  • Oil


In a Pan, on medium high heat, add Orange Chick'n fillets and cook till browned evenly on both sides. Approx. 6 to 8 minutes. Then turn heat on low and poor a thin layer of buffalo sauce on the chick'n and cook for 3 more minutes. When done remove from heat.

Making the sandwich:

Spread vegenaise dressing on bread. Then add spinach, tomatoes and then buffalo chick'n pieces.

Always check your ingredients to make sure they are animal product free.
