This is an amazing dish I found while being in the Military and traveling so much, when I ate this I found a great recipe and tweeked it to be my own. I was amazed that it really is a quick and simple dish! Enjoy!


Cook Time

Prep time: 10 min
Cook time: 25 min
Ready in: 35 min
Yields: 4 Servings


  • 1 Pound Frozen Cod, Thawed
  • 16 ounces Stir-fried Veggies, Can be prepackage
  • 1/2 teaspoon Salt, For taste, does not have to be in dish
  • 1 teaspoon Lemon Pepper, Store Bought
  • 1 teaspoon Dried Rosemary, Store Bought
  • 2 3/4 tablespoon grated parmesan cheese
  • 1 cup Tomato Juice


  1. Take a 13X9 baking pan and line it with foil
  2. Place Cod on the bottom and add the Veggies, then season with Rosemary, salt and lemon pepper.
  3. Pour Tomato juice on everything and then add the Parmesan Cheese.
  4. Bake at 400' F for 25 minutes or until the fish starts to flake.
  5. Best served with White or brown rice, depending on your taste. Then Enjoy!
