4 Easy And Tasty Veg Recipes

Schezwan veggies

It is a spicy and gravy veg side dish, goes well with dry noodles.

Schezwan Veggies

Ingredients required

For the vegetables-

  • Green capsicum (2 medium sized)diced
  • Yellow bellpeper (2 medium sized) diced
  • Red bellpeper (2 medium sized)diced
  • Carrots (3 medium sized) diced
  • Beans (200gm) diced
  • Broccoli (I big sized) cut into small pieces
  • Baby corn 100gms (boiled) cut into small pieces
  • Black pepper 2 teaspoons
  • Refined sunflower oil
  • Lemon juice (2 table spoons)
  • Salt

For the sauce-

  • Tomato sauce 8 table spoons
  • Chilly sauce 2 table spoons
  • Soya sauce 5 table spoons
  • Garlic paste 2 table spoons
  • Red chilly paste 5 table spoons.
  • Cornflour (6 table spoons)
  • Water 2 cups
  • Sugar 1 tea spoon
  • Salt
  • Refined sunflower oil 5 table spoons

Procedure

For making the sauce-

v In a pan, heat the refined sunflower oil and add sugar to it for caramel formation.

v Then add garlic paste and sauté it for 2-3 minutes.

v To this one by one, add tomato sauce, chilly sauce, soya sauce and red chilly paste and sauté it for 5 minutes.

v Put off the burner / induction cooker and cool it.

v Then strain out the sauce in a bowl with the help of a strainer. The roughage left behind in the strainer is not to be used. Only the liquid , smooth sauce is to be used.

For the vegetables-

v In a pan, take refined sunflower oil and heat.

v Then one by one, add all the vegetables and baby corn.

v To it also add salt, lemon juice and black pepper.

v Sauté the vegetables until they are properly cooked.

v Then to it add the already prepared sauce to it , sauté it for 2-3 minutes and serve it hot with noodles.

Ingredients

Ingredients required-

  • Noodles (1 packet boiled)
  • Carrots ( 2 medium sized) chopped
  • Beans 200 gms chopped
  • Spring onions (few) chopped
  • Capsicum(I big sized) diced
  • Onions 2 big sized diced
  • Boiled soya chunks (250gms)
  • Tomato sauce 6 tablespoons
  • Soya sauce 4 table spoons
  • Chilly sauce 4 table spoons
  • Vinegar 2 table spoons
  • Green chillies( few) chopped
  • Olive oil 5 table spoons
  • Black pepper
  • Salt

Procedure

  • In a pan, heat the olive oil .
  • Then one by one , add the chopped capsicum , spring onions, onions, carrots , beans and fry them for 5-6 minutes.
  • Then add the boiled soya chunks and sauté for 4-5 minutes.
  • Add salt and black pepper.
  • Then to this add one by one, tomato sauce, chilly sauce, soya sauce , vinegar and sauté for more 5 minutes.
  • Finally add the boiled noodles and mix them well with the veggies and sauces.
  • Add chopped green chillies.
  • Sauté for 5-6 minutes and serve it hot.

Broccoli In Lemon Suace

It is a sweet and sour veg side dish

Ingredients Required-

  • Broccoli 2 big sized cut into small pieces.
  • Baby corn 250gms boiled and cut into small pieces.
  • Lemon juice 1 small bowl
  • Cornflour 4 table spoons
  • Water 1 cup
  • Black pepper 2 table spoons
  • Garlic cut pieces 1 table spoon
  • Sugar 3 table spoons
  • Olive oil 5 table spoons
  • Salt.

Procedure-

  • § In a pan, heat olive oil .
  • § Add the garlic pieces and sauté for 1 minute.
  • § Then one by one, add broccoli and baby corn and cook for 5-7 minutes.
  • § Add salt and black pepper and sauté again.
  • § After this is done , pour lemon juice.
  • § Then mix cornflour in a bowl with water and pour it to it.
  • § Add sugar to it.
  • § Keep cooking until the sauce becomes thick. Serve it hot.

Mashed potato sandwich

It is a delicious breakfast item.

Ingredients Required-

  • Boiled potatoes (2 medium sized) mashed
  • Carrots (2 medium sized) boiled and mashed
  • Peas (50 gms) boiled and mashed
  • Onion (one big size) chopped.
  • Butter (50gms)
  • Grated cheese
  • Black pepper 1 tea spoon
  • Salt
  • Sandwich bread 3 pieces ( cut into triangular shape)
  • Olive oil 1 table spoons.

Procedure-

ü First toast the bread with butter until it is golden and crispy.

ü In a pan, heat olive oil and butter and allow the butter to melt.

ü To it add chopped onions and sauté for 1 minute.

ü Then one by one , add the boiled mashed potatoes, carrots and peas.

ü Add salt and black pepper and sauté it for 5-6 minutes until all the mashed vegetables are mashed and mixed together.

ü Finally, make a 3 –layered sandwich with the ready mashed veggies and grated cheese in between the layers.

Serve it with corn soup.
