Mesclun is not altogether green because it is a variety of leafy salad ingredients that include red radicchio, arugula, romaine, mizuni (mustard green), herbs and more. The combination is not only reflected in the appearance, but also in the taste that varies from bitter to sweet..

Mesclun, originally from France, has a lot more of a mixture of leaves and herbs these days in the US.

The following recipe serves: 6, and is a treat for salad lovers

Preparation time: 5 minutes


6 cups mesclun (green salad mix), about 5 handfuls

1 tablespoon finely chopped shallots

2 tablespoons rice vinegar (seasoned variety)

freshly ground black pepper

Cooking Instructions

1. Wash the mesclun, pat dry and place in a bowl.

2. Add the shallots and toss with the seasoned rice vinegar.

3. Transfer the salad to 6 serving plates. Add black pepper to taste.
