5-Minute Microwave Breakfast Sandwich

I'm a busy, broke post-grad adjusting to life in the 9-5 (and then some) working world. I'm a night owl by nature, so getting up and moving early every day can be a struggle, but of course you need to have a nutritious meal to start the day. To save on time in the a.m., this is my go-to breakfast. It’s fast, it’s easy, it’s tasty, annnd it’s healthy. Come on now, it just doesn’t get better than that.

I'm also a huge fan of microwaving cooking because I'm constantly cooking for one. Recipes like this are convenient, easy, and not wasteful—only make what you'll eat!

Cook Time

  • Ready in: 5 min
  • Yields: 1 serving


  • 6 tbsp liquid egg whites
  • 2 slices bread
  • 1-2 slices cheddar cheese
  • 2 tbsp salsa, or substitute hot sauce, green chile, etc.
  • salt and pepper, (to taste)

  1. Pour 6 tablespoons of liquid egg whites into a microwave-safe dish; sometimes I use a ceramic mug, but often when I’m in a hurry or very busy, a paper bowl conveniently eliminates any dishes. Season to taste with salt and pepper.
  2. Microwave for 2-3 minutes, depending on the power of your microwave. Ensure that no liquid is left at the bottom of the dish, meaning the eggs are not fully cooked.
  3. Toast 2 slices of bread, and place 2 slices of cheese on one.
  4. Scoop the eggs out of the bowl with a spoon, keeping them in one piece.
  5. Place on the bread, top with salsa and the other piece of bread, and presto. Magically fast and healthy breakfast sandwich.

Weight Watchers

I mentioned loving this recipe because it's quick and easy, but also because it's healthy. This was my favorite breakfast while I was dieting on Weight Watchers. By using Sara Lee 45 Calories and Delightful bread, Sargento Ultra Thin cheese slices, and fat free salsa, this sandwich only added up to 6 points! Combine that with some delicious, 0 point fruit and I was easily kept full until lunch.
