I love blueberries, do you? Have you thought you'd like to eat a healthy breakfast, but your mornings are rushed. Here's a way to incorporate a super healthy power food, blueberries, into your day. Read below my 5 easy blueberry breakfast recipes along with photos and 5 quick meal plan suggestions. A beginner cook or your kids can make these simple blueberry recipes.
Blueberries can extend the sweet taste of summer to all year if you're blessed with a bounty of berries you've frozen. I freeze blueberries in summer to have them handy year-around, but you can usually find them in the frozen foods at the supermarket.

Pancake and Waffle Mix
There's often a variety of pancake options to purchase online. We like Maple Grove Farms of Vermont Pancake mix but it's difficult to find locally after falling in love with it so here is Organic, and Gluten-free. If you looked on Amazon near these two mixes I bet you'd find Sugar-free and also, Buckwheat. Buckwheat is a dark blackish color. Personally, we have used the Organic Buttermilk and Honey; and Buckwheat. These all were good.
Add your blueberries to the mix batter and make the breakfast described in the first meal plan. Yummy!
Organic Pancake Mix
Gluten Free Pancake and Waffle Mix
This is a quick and easy meal plan using a time-saver, a mix such as Maple Groves Farms of Vermont Organic Buttermilk Pancake and Waffle Mix.
To compensate for any guilt of not making a homemade pancake recipe, sprinkle a few blueberries in your pancakes when cooking them. Try my simple blueberry compote recipe included below. In my opinion, it makes the pancakes delicious and your energy can be given to the rest of the meal.
How To Cook Blueberry Pancakes
Pancake tip: Heat a nonstick pancake grill or lightly oil-sprayed skillet. Make sure your skillet or griddle is hot enough, before adding the pancake batter. Test the heat of the skillet surface by flicking water droplets off your fingers onto the skillet. If the water droplets sizzle and evaporate, the surface is a hot enough temperature to brown pancakes.
Make the pancake mix according to directions.
Using a 1/3 cup measuring cup, scoop batter onto the heated nonstick pancake grill or prepared skillet. Sprinkle with blueberries and flip over when bottom side is browned. Finish cooking and serve with Blueberry compote (see recipe below). Add butter and drizzle of maple syrup, if desired.

Optional: sliced mushrooms, sauteed with thyme and minced garlic.

Saucy Blueberry Compote Recipe
1 cup frozen blueberries
1/2 cup water
1 T. sugar
Heat ingredients to a boil in a small saucepan. Lower heat to simmer & stir occasionally while sauce thickens to desired consistency, about 10 minutes.
Blueberries are a Super Power Food. This sauce is healthy with little added sugar.

2. French Toast with Blueberry Compote - Healthy and Quick Hot Breakfast
Quick and Easy French Toast
1 T. milk or alternative milk
1/2 tsp. salt
1/2 tsp. cinnamon
Heat a nonstick or lightly oiled skillet or griddle.
In a bowl (a shallow rectangle dish works well) beat eggs with a fork, add milk, salt, and cinnamon. Dip a slice of bread into mixture and turn over with a fork. Cook until browned on one side, and flip over with a turner. Add a sprinkle more of cinnamon while it's in skillet cooking, if you're a cinnamon lover.
Makes 4 pieces of French toast.
Tip: Want to use alternative dairy-free milk? Try one of these: coconut, almond, soy or rice milk.

Healthy Blueberry-Banana Smoothie Using Coconut Milk
Blueberry-Banana Smoothie Recipe
1 frozen banana
1/2 cup frozen blueberries
1/2 cup coconut milk
1/2 tsp. cinnamon
In a blender or food processor, place frozen chunks of banana and part of the coconut milk. Blend. Add frozen blueberries, cinnamon, and remainder of coconut milk. Blend until smooth. Makes one serving.
This is so easy. I bet your kids would make you one if you suggested it. They would like one, too. Funny how if they make a recipe themselves they think it is the greatest. No need to tell them it's healthy.

Blueberry Yogurt Cups
In a small juice glass, paper cup, or bowl:
Layer, blueberries, yogurt, granola.
Repeat a second time: blueberries, yogurt, granola.
Top with a few blueberries.
I used vanilla bean flavored yogurt, but strawberry or berry flavored would be yummy, too.

Bake My Awesome Blueberry Muffins
The whole kitchen smells wonderful while these muffins bake. Try baking these the night before for an easy, earlier breakfast. They freeze well, too, for other mornings.
Awesome Blueberry Muffins
1 1/2 cups whole wheat flour
1 1/2 cups unbleached all-purpose flour
2 tsp. baking soda
1/4 tsp. salt
4 tsp. baking powder
1 T. ground cinnamon
1 1/2 c. buttermilk
1/2 c. lightly packed brown sugar (Or optional: use 3/4 c. for sweeter muffins)
1/4 c. canola oil or butter, melted and cooled
2 c. fresh or frozen blueberries
1 T. additional brown sugar to sprinkle on tops
Mix whole wheat flour, all-purpose flour, sugar, salt, baking soda, baking powder, and cinnamon in a large bowl. In a medium-size bowl, beat eggs, buttermilk, and oil until blended. Add egg mixture to flour mixture; stir just until moistened. Quickly stir in blueberries. Spoon batter equally into 21/2 inch greased or paper-lined muffin cups. Cups will be full. Sprinkle over all with 1 Tablespoon brown sugar.
Bake in a 375 degree oven 30 minutes, or until well browned. Let cool in pan on a rack for 5 minutes; turn out unto rack. Serve warm or at room temperature. Freeze well.
Makes about 12 muffins.
