Easy, Yummy, Healthy Meals in 5-minutes

This lens is about my favorite fast food place - my own kitchen. I work a lot of hours so I need to have some fast meals otherwise I won't eat, or worse yet, I'll order pizza delivered or worse yet, eat a whole bag of chips or candy.

I'll share the recipes I use for some of my favorite quick and healthy meals. I'll also share some of my tricks and tips to having the foods available to make the meals. The recipes are pretty healthy and only take 5 minutes to put together. I'll be adding recipes often as I write down the ingredients and when I create new ones.

Recipe: Apple-Peanut Butter Bagel

Healthy and delicious

Apple-Peanut Butter Bagel

Ingredients

IngredientsBagel

Apple (any kind)

Peanut (chunky or smooth)

Directions

Toast the bagel, spread with your nut butter and top with apple slices.

Substitutions or additions:

Almond butter or cashew butter, chunky or smooth both taste great.

Recipe: Deviled Egg Bagel

Not like the devil at all

Deviled Egg Bagel

Ingredients


Bagel

Sliced black olives

Deviled egg (see recipe below *)

* Deviled egg

1 hard boiled egg (smash with fork)

1/2 tsp salad dressing

couple drops of apple cider vinegar

salt to taste

Directions

Mix deviled egg ingredients together then spread on toasted bagel. Top with sliced black olives.

Note: As you can see from the photo, I couldn't wait and took a bite before I took the picture. I do love my deviled egg bagels!

Recipe: Spinach Pizza

To die for!

Spinach Pizza


Ingredients

1 ciabatta roll

1- 2 cups fresh spinach

2 slices medium cheddar cheese

1 tomato sliced

1/2 tsp. fresh or dried basil

Slice ciabatta roll in half. Put 1/2 of the spinach on top of each half. Lay cheese slice on top of each half. Broil for 2-3 minutes to your desired crispness. Put sliced (cold) tomato slices on top and sprinkle with basil. Serve and enjoy!

Substitutions or additions:

Pita bread, sliced french bread or English muffin

Use jack or mozzarella cheese slices.

Add: black olives, onions, bell pepper slices before broiling.

Sprinkle with fresh basil

Recipe: Chinese Chicken Salad

Protein and vegetables, what could be better

Chinese Chicken Salad

Ingredients


1 cup cooked chicken diced (leftover)

3 or 4 cups Lettuce

1/4 cup Green or red bell pepper - thin slices

1/4 cup Onions - thin slices

Oriental Salad Dressing

1/3 cup white or apple cider vinegar

1/4 cup soy sauce

2 tbsp. water

1 tsp. sesame oil

1/2 tsp. sesame seed

2/3 cup olive oil

Directions

Combine first all ingredients EXCEPT oil in jar with tight fitting lid. Shake well then add oil and shake again. Chill before serving. Makes about 1-1/2 cups.

Toss all ingredients together with your desired amount of dressing.

Recipe: Yummy Blueberry Yogurt

Beats store bought fruit yogurt all to heck!

Yummy Blueberry Yogurt

Ingredients


16 ounce Plain yogurt

1/4 tsp vanilla

3 drops stevia (or agave)

1 cups fresh or frozen blueberries

Directions

Stir the vanilla and stevia into the yogurt. Add the blueberries and walla walla, yummy berry yogurt!

Substitutions or additions:

Blueberries, blackberries, strawberries, raspberries all can be substituted and I do depending on what I have.

Planning and Preparation is the Key to Fast Meals

1-day a week cooking

Once a week, usually on Sunday, I cook or prepare the foods in advance in 1 to 2 hours. I then use the ingredients for the next weeks meals. Below is a typical prep day:

Hard boil some eggs - peel and store in sealed container.

Used for deviled eggs and on salads.

Fry ground turkey, chopped onions and garlic with a little olive oil.

Use 1/2 for spaghetti or lasagna sauce and 1/2 for chili beans.

Fry several ground turkey patties in a little olive oil.

Used as main dish, sandwiches. They freeze well.

Clean and shred lettuce - store in sealed bowl or bag.

Used for salads, sandwiches, tacos.

Clean spinach - store in sealed bowl or bag.

Use for salads, bagel pizza, breakfast egg dishes, spinach cheese bagel.

Slice pineapple and/or melons - store in sealed bowl in frig.

For deserts, snacks, making flavored yogurts, smoothies.

Blueberries, raspberries, and/or blackberries. Clean and freeze in bags.

For deserts, snacks, making flavored yogurts, smoothies.

Clean and slice carrots and celery - store in sealed container in frig.

Use for side dishes, snacks.

Make salad dressing - store in glass jar in frig.

Used for salads, sandwiches.

      Tortilla Pizza: preheat oven to 350. While that's heating, spread pizza sause on tortalla, cheese & whatever else you like such as tomatoes,ham, spinache (etc)place another tortilla on top & put in oven until the cheese is melted. I like my tortalla crispy so I leave it in for 15 min. But putting it together is so easy & fast. My 6 & 7 yr olds can do it!

      I have a lens for home meal preparation where the objectives are convenience and calorie predictability (/out-of-the-box-dieting). I will try your bagel ideas. Cooking ahead is a great strategy for family dining.

      This is a fantastic lens! I do something similar to this every Wednesday. I talk about it in my Five Chicken Recipes lens. But I do the same when I purchase very lean beef and ground turkey. I will divide the meat, make a few different dishes, freeze and thaw when I want them. It just makes more sense to me to do that. I am going to add a plexo to my chicken lens and feature this lens.
