Sandwich Recipes

I live in a country where certain ingredients are hard to come by or quite expensive.

Trying to find a substitute for such ingredients is not always easy.

So I did the next best thing, I collected recipes which were easy to make, did not ask for ingredients which were both hard to find and costly.

In this hub I share with you five such sandwich recipes.


Gordon Ramsay - Homemade Mayonnaise

Chicken buns with sweet peach and mint sauce

Ingredients and method for the grilled chicken:

  • 2 chicken breasts – marinated with 1 teaspoon salt and ¼ teaspoon pepper for 10 minutes.
  • Grill in oven for 30 minutes on 350°F/180°C/Gasmark 4 turning once.
  • Make sure the breasts are fully cooked.
  • Chop the chicken and set aside.

Other ingredients:

  • 4 buns slightly toasted and cut in half
  • 4 slices ham
  • 4 slices cheese
  • Lettuce leaves

Sweet peach and mint sauce recipe

Ingredients:

  • 1 peach chopped
  • 2 green onions with leaves chopped finely
  • 1 tomato chopped
  • 1 ½ tablespoons mint leaves chopped finely
  • ¼ teaspoon chili powder

Mix all the ingredients in a bowl. Set aside.

Layer each bun with chicken, ham, cheese, lettuce and finally top with the sauce.

Cold chicken on a bun

Ingredients:

  • 1 ½ cups cooked chicken – chopped
  • 1 cup cheese – grated
  • ½ cup celery – finely chopped
  • ¼ cup green bell pepper – chopped
  • 1 green onion with leaves – finely chopped
  • ½ cup mayonnaise
  • ½ cup plain yoghurt
  • Salt and pepper to taste
  • Lettuce leaves

Method:

Combine all the ingredients in a bowl except for the lettuce.

Refrigerate for 15 -30 minutes.

Serve on each bun with the lettuce.

Grilled chicken in pita bread

Ingredients for the grilled chicken

  • 1 chicken breast - cut the chicken into 1-inch cubes.
  • Combine the following in a bowl -
  • ¼ cup olive oil (vegetable oil can also be used)
  • ¼ cup lemon juice
  • ½ teaspoon salt
  • ½ teaspoon dried oregano
  • ¼ teaspoon garlic powder
  • 1/4 teaspoon ground pepper
  • Marinate the chicken cubes in the mixture and refrigerate for 3 – 4 hours.
  • Grill in oven on 350°F/180°C/Gas mark 4 for 10 minutes or until done.
  • Place in a dish and set aside.

Other ingredients needed:

  • 2 Pita breads cut in half
  • 1 onion – sliced
  • 1 tomato – sliced
  • ½ cup yoghurt

Method:

Fill the inside of each halved pita bread with grilled chicken, sliced tomato, sliced onion and top with yoghurt.


Tuna Sandwich

Ingredients:

  • Sliced bread
  • 2 cups flaked Tuna
  • ½ cup mayonnaise
  • ¼ cup chopped celery
  • ½ chopped onion
  • ¼ cup chopped green bell pepper
  • Salt and pepper to taste

Method:

Combine the above ingredients a bowl.

Sandwich the spread between two slices of bread and enjoy.

Vegetable and cheese layered sandwich

Ingredients:

  • 4 slices of bread
  • 1 cup beetroot (slightly boiled, peeled, grated and seasoned with salt, pepper and a little butter)
  • 1 cup carrot (slightly boiled, peeled, grated and seasoned with salt, pepper and a little butter)
  • 1 cup cheese (grated)
  • Lettuce leaves (sliced finely)
  • Dijon mustard
  • Mayonnaise

Method:

This is a layered sandwich and each slice has 2 different spreads on it. Take a slice of bread and apply some mayonnaise on it. Fill half of the slice with some of the lettuce leaves and the other half with some of the cheese.

Spread some Dijon mustard on both sides of a slice of bread and place it over the lettuce and cheese slice. Apply some of the beetroot mixture and some of the carrot mixture on the mustard slice (which is faced up).

Take another slice of bread and spread mayonnaise on it and fill half of the slice with some of the lettuce leaves and the other half with cheese. Place this slice (lettuce leaves and cheese facing up) on top of the beetroot and carrot slice.

Take the final slice of bread and spread Dijon mustard on one side and place this slice (mustard part facing down) on top of the lettuce and cheese slice. Cut the sandwich into four and enjoy.

      Hello TajSingh. Thank you and hope you find the recipes easy to make. Bell peppers are sometimes hard to find at the store so I use capsicum as a substitute. Turns out quite well but I remove the seeds, if not the sandwich will be too spicy.
