5 Ways To Use Leftover Chicken

Quick Recipes for Leftover Chicken

If you are like me, there always seems to be leftover chicken. Whether I roast a whole chicken, throw some chicken on the grill or make a saute on the stovetop, I have leftovers. This collection of recipes are those that I use most often for chicken. They are so good that I sometimes prepare fresh chicken to use in the recipe if I am lacking leftovers. The best part is that all of these recipes are easy, quick and delicious plus the ingredients are readily available. Some of the recipes are freezer friendly, which I have noted under the recipe.

I love this stress-free way of cooking where I have good recipes and ready to use ingredients so I don't have to think about "what am I making for dinner"? Most of the ingredients can be stocked in your pantry and leftover chicken can be frozen and ready to use.

5. Chicken a la King


1 can cream of chicken soup

1/2 cup white wine

1 tsp garlic powder

1 tsp dill weed

1 small can chopped mushrooms, drained

1 small jar chopped pimeinto, drained

2 cups cubed leftover chicken

chopped scallions, for garnish


Add all ingredients to a large saucepan. Cook over medium heat until simmering. Continue to simmer about 15 minutes. Serve over rice, noodles or toasted bread. Top with scallions, if desired. 4 servings.

Freezer Friendly

4. Sweet and Sour Chicken


1/4 cup brown sugar

1 tbls cornstarch

1/4 tsp ginger

1 lg can pineapple chunks in juice, reserving juice

1/4 cup white vinegar

1 red pepper, seeded and coarsely chopped

2 cups chicken, cut in chunks


In a medium size bowl combine brown sugar, cornstarch and ginger. Pour in pineapple juice and vinegar stirring until smooth. In a large non-stick skillet, add pineapple juice mixture and cook until bubbly. Add red pepper and chicken, cooking until pepper is crisp tender. Serve over rice.

These are some of the items needed to make these recipes:

3. Asian Lettuce Wraps


1 head of Boston or iceberg lettuce

1/2 cup chopped water chestnuts

1/2 cup chopped celery

1/4 cup chopped scallions

1/4 cup soy sauce (low sodium ok)

1 tbls hoisin sauce

1 tsp sesame oil

3 cups leftover shredded chicken


Separate, wash and dry lettuce leaves, set aside. In a large bowl combine remaining ingredients. Filll each lettuce leaf with a 1/3 cup of chicken mixture. Serve with rice and additional soy sauce, if desired. Serves 6-8.

Chicken mixture is freezer friendly

2. Fruity Chicken Salad

Serve this fun salad on a soft roll or wrap in tortillas


3/4 cup light mayonnaise

1 tsp salt

1/4 tsp black pepper

1/2 cup chopped celery

1/3 cup chopped dried cranberries

1/3 cup slivered almonds, toasted

2 1/2 cups chopped leftover chicken


In a large bowl combine first 6 ingredients. Fold in chicken and chill until ready to use.

1. Chicken Chili - Chicken Chili is so savory and delicious that no one will every know that you used leftover chicken and it's even better the next day.


1 tbls olive oil

1 lg onion chopped

1 green bell pepper, seeded and chopped

2 cups shredded leftover chicken

1 lg can crushed tomatoes

1 sm can tomato paste

2 cans chicken broth

1 can yellow corn drained

1 can light red kidney beans, rinsed and drained

1 tbls chili powder

1 tsp garlic powder

1 tsp cumin


In a Dutch oven, saute onion and green pepper in olive oil. Add remaining ingredients and heat to a simmer. Continue simmering for about 45 minutes. Serve with corn bread or tortilla chips. Serves 4
