A Crunchy Caramel Corn
Well it seems I should get back to sending some recipes...as I got told off good today...there's always comfort in food right...So try this recipe... it is very tasty and quick and easy and sweet and I have no idea how many calories there is in it...
prep time a whole 10 minutes...total time one long hour though...
you need :
4 tblsp. butter , plus some more to trb on the baking sheet
10 cups plain unsalted popped popcorn..You and also use a 3.3 oz. bag micro popcorn.(1/2 cup kernels)
1 cup cashews, coarsley chopped or not (optional) use any nut you like
1/2 cup packed light-brown sugar
I use all organic ingredients personally...
then you follow the directions below :O)
1. Preheat your oven to 300 F.. butter a large rimmed baking sheet ; set aside. Now place popcorn in a large bowl ; if using nuts, add to bowl and toss to combine. Set aside.
2. In a small saucepan , bring butter, sugar,1/8 teas. salt, and 2 tblsp. water to a boil, you must stir constantly. working quickly, drizzle popcorn with with sugar syrup and toss.
3. Spread popcorn evenly on prepared baking sheet. Bake, tossing occasionly, until golden and shiny, about 40 min. Transfer hot popcorn to parchment-paper lined baking sheet ; let cool. Store in airtight container for up to one week..ha ha :o) if it lasts that long...Enjoy and don't worry - be happy...
