Taco Soup--Easy, Economical, Delicious!

Usually in the heat of the summer I tend to prepare lighter and cooler meals. We have had a lot of rain lately, though, so I find myself preparing a family favorite--Taco Soup.
My family and I were first introduced to this recipe on a trip to Nevada a year or so ago and I have made it at least a dozen times since then. My sister shared her delicious recipe with me, but I have made some changes, sometimes using the ingredients I had on hand, using ground turkey instead of ground beef, making my own chicken stock so that I claim this recipe as my own. Serving this soup with chips and garnishing it with grated cheddar cheese, sour cream and fresh vegetables from my garden makes this soup economical, low in fat and quite healthy.
It is super easy to make and its a breeze to clean up the kitchen...one pot and that's all! That way I get to enjoy the summer along with my family.
Taco Soup Recipe
A super easy soup recipe for cold or rainy days.
prep time--10 minutes, simmer--40-60 minutes
1 pound ground Turkey
1 large onion diced
1 can pinto beans
1 can white or navy beans
1 can white shoe peg corn
1 can Original Rotel tomatoes
2 1/2 cups chicken broth or water
Fiesta Ranch Dressing packet
Taco seasoning packet
1.Brown the ground turkey and onions in a large pan. Drain/rinse the meat .
2.Stir in the beans, corn and tomatoes, then add the broth or water, taco seasoning packet and Ranch Dressing packet.
3.Simmer for 40-60 minutes.
--When ready, serve in big soup bowls and garnish with any of these: dollop of sour cream, spring onions, tomato pieces, chopped or smashed avocado, jalapeno peppers, black olive slices or shredded cheese. Serve with corn muffins or tortilla chips on the side.
--Feel free to substitute beans (cannellini and black beans work great too), Regular/Original or even Green Onion or Spicy Ranch Dressings can be used if Fiesta Ranch Dressing is not available.The original recipe calls for ground beef, but using ground turkey reduces the percent of fat.
--Double the recipe and freeze portions of the soup to serve later. Enjoy!
