A Marriage Of Crab And Corn " Big Easy " Style

When most people think of beignets they think of the delightfully delicious fried pastries served at Cafe Du Monde in New Orleans old French Quarter. The beignets served at Cafe Du Monde are like doughnuts with out a hole and sprinkled with powdered sugar. But here I am going to teach you how to make a different kind of beignets with crab and corn as their main ingredients. If you ever get the chance you should visit Cafe Du Monde in New Orleans for the most delicious beignets you will ever eat. I suggest a warm spring morning. That way when your finished with your beignets you can take a walk through the huge Flea Market just down the street from Cafe Du Monde. But now lets get back to the crab and corn.

Crab And Corn Beignets

I was doing my Mothers wedding back a few years ago and she wanted me to come up with a new and unusual appetizer to serve at her wedding so I came up with this recipe which everyone loved. My Mom loved fresh corn and got married in the summer so I used fresh corn cut off the cob and lump crab meat from a local seafood shop. I wanted the crab and corn beignets to be flavorful and delicious so I added in a lot of delicious things that produced a oh so wonderful flavor that had people begging for the recipe.

When you use any type of crab meat be sure to look and pick through your crab meat carefully to be sure you don't have any bits of shell. Nothing will ruin a delicious crab dish like finding a piece of crab shell in your mouth. So be sure to check your crab meat carefully.

For Your Corn And Crab Beignets You Will Need.

1. One Small Jar Roasted Red Bell Peppers drained and chopped fine.

2. One Cup All Purpose Plain Flour.

3. One Fourth Cup Self Rising Cornmeal.

4. One Teaspoon Baking Powder.

5. One Half Cup Buttermilk.

6. Two Large Well Beaten Eggs.

7. One Half Pound Crab Meat well checked for shell pieces.

8. One Cup Corn Kernels And Juice just cut off the cob.

9. One Half Cup Mayonnaise.

10. One Small Bunch Green Onions with tops very well chopped.

11. One Tablespoon Fresh Squeezed Lemon Juice.

12. One Teaspoon Each Salt , Pepper , and Ground Cayenne Pepper.

Mix all your ingredients together well and let set at room temperature covered for at least 30 minutes.

Pre-heat your home deep fryer to 350 degrees and once it reaches that temperature drop your batter by the tablespoon full into the hot oil carefully and fry until golden brown. You may need to turn the beignets over with a large fork or metal scoop to cook them on both sides.

As soon as they are cooked place them on a bed of paper towels to drain well. Serve with cocktail sauce for a delicious tasty treat. Some people prefer them served with ranch dressing.
