A Raspberry Mousse Recipe

Updated on October 19, 2011

Raspberry Mousse

This raspberry mousse recipe is easy to make and tastes delicious. It can be made a day ahead of time and kept in the refrigerator. It is best to use fresh raspberries with this recipe. Frozen raspberries will work, but the result is not as good as using fresh fruit. You can top this with fresh raspberries and whipped cream when serving. This dessert is creamy and full of raspberry flavor.

2 cups of fresh raspberries

ΒΌ cup of sugar

1 tablespoon of lemon juice

1 tablespoon of unflavored gelatin

4 cups of whipped cream

Heat the raspberries, sugar and unflavored gelatin in a sauce pan on low heat until the gelatin has completely dissolved. Add the lemon juice and stir to combine. Remove from heat and allow it to cool to room temperature.

Pour the contents of the sauce pan into a large mixing bowl and place into an ice bath. Add the whipped cream and fold in gently to combine.

Pour into serving dishes or glasses and chill in the refrigerator for one hour, or overnight.

Top with fresh raspberries just before serving. You can also top with whipped cream.
