A Twist On Breakfast

Breakfast Mexicano

This is a wonderful twist on breakfast. We have this at least once a week. It's a nice break from the traditional breakfast. It doesn't take long to prepare but it's very tasty. I usually serve this with salsa for that final touch of goodness.


White corn tortillas {La Favorita are my preference} 12 count

Eggs 6 well beaten

Jalapeno Peppers 2 fresh chopped

Onion 1/2 cup chopped

Cooking Oil 3 tablespoons

Salt and Pepper {to taste}

Cheddar Cheese {grated}

this recipe is easy just chop the peppers and the onion set aside

grate the cheese and set aside

In a small mixing bowl beat the eggs {I add 4 tablespoons of milk it makes the eggs light and airy}

Cut up the corn tortillas I usually make them smaller than the picture above and I make squares not triangles {cut to your preferance}

Ok now we're ready to cook

Heat oil in a non stick skillet on med heat

when oil is ready add the tortillas and stir them around until they are coated with the oil

Let them fry for about 5 minutes

Add the onion and peppers next.

cook for another3 minutes

Now add the eggs and stir everything together {continue stirring so the egg does not burn}

When egg is just about done cooking add in cheese

Now salt and pepper to taste and enjoy
