A carrot sandwich by G-Ma :O)

Ready to go




I am always searching for something new and refreshing to eat.


I guess you can tell I enjoy food. Well since I am mostly going vegetarian these days this one certainly seems to fit in.


Of course I tweak most of the ones I find, this one included.


I will post the original for you, plus what I did to make it my way...:O)... and

I have to admit it was DELICIOUS...yum... I hope you try this one !!

A British chef Nick Sandler created this sandwich...hope you like it.


4 servings, and about 25 minutes to make


Coarsely grate 2 large carrots.


In a skilletheat 1 tablespoon extra-virgin olive oil ( I used coconut oil)


Add the carrots


2 thinly sliced garlic bulbs (well 2 of the pieces)


1 teaspoon caraway seeds ( which I was out of so I used Poppy seeds)


Season with salt and pepper.


Cook until the carrots are just wilted. 4 minutes.


Spread 4 slices grilled (toasted works) sourdough french bread with


2 tablespoons hummus. (there is a good recipe here on the hubs for hummus)

Top with the carrot mixture, dollops of Greek yogurt and cilantro leaves;


season with S & P and serve.


I made this pretty much the same, I added some finely chopped onions, yellow


bell pepper with the carrots, and used a dash of Italian seasoning.


Am also thinking you could use some mozzarella cheese melted ( or any kind

actually before you place the carrot mixture on.


Another thing would to be toast the bread, then rub it with fresh garlic. (if you like garlic).


You can use your imagination and make your own version... I love to...:O) Hugs G-Ma

      Hmm... What an interesting recipe. Like you, I'm constantly tweaking recipes and I have to agree with your additions! Right now, I'm growing a variety of colored carrots, so I must try this recipe when their ready for the picking. Thanks for sharing and take care.

      VioletSun...Thanks for coming by and commenting...Yes I have tried many ways I just love it...Last time I made one I had used all the caraways seeds so I used (fresh from my garden) rosemary.       G-ma, I am going to try this! I want to eat healthier, and nowadays, but, get frustrated that I can't think of alternatives or find recipes that are yummy. It gets boring to eat the same old foods. BTW, I will use whole wheat pita bread as I love it's texture when toasted. :)

      I love this idea! Cooked and raw veggies with hummus? Awesome. Too bad I'm still off fats and breads. But you know, all the other ingredients would come together beautifully as a dish in their own right. Up, interesting, and useful!

      This is one I will probably try, G-Ma. I love carrots and like you, I am eating mostly veggies these days. I love the additional suggestions you mentiona as they will only add flavor. I think I may try this as a pita wrap sandwich. Voted up!
