Chicken Empanadas

HI My name is Lisa. I have written several hubs and a lot of them are recipes. I really enjoy making Chicken Empanadas because I know they taste fantastic and everyone always eats them as soon as I am done frying. Ok the truth would be my husband will show up and steal just one and then my oldest daughter will come out of no where for just one. Luckily the little ones are bit more patient. ( I laugh as I write this because its so true ) When I first learned to cook I believed the longer I cook something the better it will taste. Well for certain meals this may stand true like simmering your sauce all day. For this recipe there is no need to waste time. There is some preparation time involved in making Empanadas and that goes for any flavor.But a quick fry to a golden brown is all these delicious Empanadas need. I will go into detail how I flavor the chicken, How I cook the chicken how I chop it and the ingredients I add to give it that special touch that will make who ever you serve them to want to come back for more.

Yields: about 20 empanadas

Ingredients

  • Chicken Breast, chopped
  • Sofrito, 4 tablespoons
  • Garlic Powder, 1 teaspoon
  • Empanadas shells, i use goya
  • Pepper, 1/2 teaspoon
  • Paprika, 1/2 teaspoon
  • Adobo, 1 teaspoon
  • Sazon, 2/3 packet
  • olive juice, 1/2 teaspoon
  • onions, chopped finely
  • green peppers, chopped finely
  • Sharp Cheddar Cheese, Shredded
  • Olives, chopped
  • vegetable oil, enough to deep fry for you frying pan

How to prepare the Chicken

I start with boneless skinless chicken breast completely defrosted. Make sure to clean your chicken. Then I take some paper towels and dry the chicken. Next I cut into small pieces. After I put all chicken in a skillet and add the following ingredients. Sofrito, Sazon(with achote) this adds color and flavor, garlic powder, adobo, pepper, paprika, olive juice and just a bit of chopped onions and green peppers. On a low temperature cook the chicken until no longer pink. Then transfer chicken to a cutting board and chop into very small pieces. Some people prefer to just shred the chicken. Either way gives you a very good result. The shredding seems to make the chicken fluffier so it will make a bigger empanada. Once your chicken is cooked place in a bowl and get ready to start making your Empanadas.

Cooking and Preparation Instructions

  1. Defrost Chicken and Empanada Shells
  2. Cook Chicken as described below
  3. Chop Onions, Peppers and Olives and place together in one bowl and mix together
  4. Put Shredded cheese in another bowl
  5. Put Chopped or Shredded Chicken in another bowl
  6. On a plate Take one Shell all Chicken, about 2 tablespoons
  7. Add about 1 tablespoon of onion, pepper olive mix
  8. add about 1-1/2 tablespoons of shredded cheese
  9. now fold the shell in half and crimp the edges with a fork on both sides of the shell this will keep all ingredients inside like a pocket and will also make them look nice
  10. While you are preparing the empanadas start heating your oil
  11. Now time to fry . Fry each empanada on each side to a golden brown and then place on paper towel to absord the extra oils. Let cool for a minute and serve

So if you have read any of my other hubs you will know that I learned to cook from many different people so I have had a variety of knowledge presented to me. I only made beef empanadas as that is how I was taught and I really liked them. Well years started passing and my oldest daughter stopped eating red meat. After some time we realized this child only wants to eat fried chicken. I had to put a stop to that so I started experimenting with different chicken recipes to at least make sure she has some protein in her diet. As a family we all love Empanadas so I started making two batches one chicken and one beef. Now we make it one chicken one beef and on chicken on cheese added for the big kid who will one day drive her future husband crazy. Again I laugh as I write this. Now it seems that everyone wants some with all ingredients some only cheese and chicken and of course the other family members still want their beef ones. So we have to mark clearly which is which but even though it takes a few extra minutes to separate and make sure I give everyone what they want. Once I am done making this meal I can guarantee everyone eats. And in my home this is a battle as meals can be confusing when 3 family members eat meat and one only eats chicken and my youngest is a dialysis patient and her diet is very restricted so I know when this meal is made everyone eats. And that makes me a happy Mommy!

      I got 1 case of HGSS and 1 case of unleashed when they were first rleeased. Both of those sets caused headaches and very non user friendly patterns. They seems to have 2-3 patterns combined into a single box in most cases. I actually had to open about 75%´╗┐ of the packs of each set to get all the expected primes/legends.

      I love numbers/math. Majored in fanince and minored in math in college. In High School I got 7 years of math (block classes every year except´╗┐ freshman year had to go to a local college my senior year of high school for calc 2 and calc 3)
