A quick tasty simple salmon dish with sweet chilli sauce recipe

A tasty salmon dish

This salmon dish is not only very quick and easy to prepare it happens to be a healthy family meal and one of my favorites.Salmon is high in protein and rich in Omega-3 fatty acids ( Omega-3 fatty acids are linked with the prevention of heart disease) which are important for adults as well as kids..Todays society is very busy and we all tend to eat things on the go and have the convenience of tv meals which can be blasted in the microwave when we get in from a long day at work or from sorting out the kids.So i have a quick easy salmon dish that uses good ingredients takes very little preparation and will be done in the same time it takes to put a plate of oven chips on the table.

Salmon fillet


fresh salmon (cut into suitable portion sizes)

Yellow Peppers but red or green is ok depending on your taste

lemongrass cous cous

new potatoes

mixed herbs,salt and pepper

sweet chilli sauce

Preperation & Cooking

Place salmon fillets into bag or container and pour in chilli sauce to give salmon a good coating also add a little salt, pepper and mixed herbs massage together tie off bag and place bag or container fridge (It is best to do this the night before or the morning you intend to cook the dish as this will allow flavors to penetrate the salmon better) If you buy the ingredients on the day just coat the salmon before you cook.

You can also add a little lime to the salmon as well but its a matter of preference

Preheat your oven to about 180 degrees.while oven is heating prepare your cous cous.

Cut peppers in half and scrap out when cous cous is ready pack cous cous into peppers and put on baking tray.

Place salmon onto a large sheet of foil and wrap it up and place on baking tray with peppers

Boil some water in a pan and bring to boil for the new potatoes.

Place baking tray in oven and cook salmon for about 15minutes maximum

Drain potatoes serve on plate with salmon and peppers and there you have a very tasty and healthy meal.

You may also wish to add some additional vegetables to the dish broccoli or young green beans are quite nice with this dish.

Alternatively you could serve this on a simple plain rice dish
