Afghan Chopped Salad (Salata) - Vegan - Gluten Free
This refreshing Afghan salad recipe consists of tomatoes, cucumbers, green onions, radishes and cilantro. Fresh squeezed lemon and sea salt is used for the dressing. Since the ingredients are chopped into small pieces, it can be served as a side dish with rice. For this recipe, it is best to use Persian cucumbers since the skin is not as tough and waxy as regular cucumbers. English or hothouse cucumbers are also good since they are seedless and have softer skin. If you're unable to find either kind, you can still use regular cucumbers, just make sure to peel the skin and remove the seeds. Red onions can be substituted for the green onions. This traditional recipe is vegan and gluten free. Use organic ingredients when possible. Stay healthy and enjoy!
- 3 Large Tomatoes
- 3 Persian Cucumbers
- 1 Bunch Green Onion
- 1 Bunch Cilantro
- 10 Small Radishes
- 3 tbs Lemon Juice
- 1 tsp Sea Salt
- Chop the green onions, tomatoes, cucumbers, radishes, and cilantro into small pieces.
- Combine all the ingredients in a mixing bowl. Add salt and lemon juice. Enjoy!
