Amazing Stuffed Peppers

Updated on September 8, 2011

There was never a dull moment in my family when it came to food. Dad was one to try new restaurants, anything from home cooking to Greek cuisine or which ever new restaurant may be opening near by. Mom on the other hand, was a recipe clipper. If she seen something that looked like we might eat it, well, it was soon in the oven or on the stove to be served as our next meal. Growing up in a family of "food connoisseurs", is where I started experimenting with, and inventing new and exciting recipes. My "Amazing Stuffed Peppers", is just one of many that I have conquered as a favorite with friends and family. Enjoy!

Amazing Stuffed Peppers

  • 1lb Ground Pork

  • 1/2 lb Ground Bacon or Bacon flavored sausage

  • 1/4 cup Chopped Onions

  • 1 4oz can mushroom pieces

  • 1/2 cup Swiss Cheese (cut into small cubes)

  • 1 tsp. Black Pepper

  • 1/2 tsp Garlic Powder

  • Salt to taste

  • 2 Eggs

  • 1 cup Saltine Crackers crushed.

  • 3-4 Medium Bell Peppers cut length wise.

  • 1 101/2 oz can Cream of Mushroom soup.

  • 1/2 cup French Onion Sour Cream

  • 1Tblsp Worcestershire Sauce.

Combine first 10 ingredients in mixing bowl.( I find it easiest to mix with my hands.) Prepare pepper halves in a glass casserole dish or one that will allow room for topping ( I use a large glass pie pan). Stuff peppers heaping full with meat mixture. Mix together final 3 ingredients and pour over the top of of the stuffed peppers. Bake at 350°F for 45-50 minutes uncovered. Serve with your favorite vegetable and choice of wine, and enjoy!

I love stuffed peppers! I'm not sure I've ever had one I didn't like. I'll definitely try this recipe, though without the mushrooms as I'm not a fan of their texture. It looks like it's hearty enough for an entree, which lots of stuffed peppers are not. Thanks for sharing!
