American Style Pancakes

There is a lot to be said for that old adage ‘breakfast is the most important meal of the day’ so it deserves more respect than a couple of slices or toast or a bowl of cereal. Mixing up a batch of pancake batter can be done really quickly and will allow you to enjoy a versatile and tasty breakfast. The wide range of toppings that can be eaten with pancakes ensures it will be a breakfast that will suit everyone’s tastes buds.


Method:

Sift the flour, baking powder, salt and cinnamon, if using, into a large bowl. Add the nutmeg, or any other suitable spice that you wish to use.

Slowly add the milk while whisking to create a smooth batter, but do not worry if it appears lumpy.

Add the egg and thoroughly mix to combine it.

Heat a little oil in a frying pan and move it around to coat the base.

Once the pan is heated, carefully pour a ladle-full of batter into the centre of the pan and move the pan around to spread the batter.

On a medium heat, let the pancake cook for a minute or two until golden brown before flipping with a spatula and letting it cook.

Continue in this matter until all the batter is gone, leaving the cooked pancakes in a warm oven until they are ready to serve.

Serve with honey or syrup or bananas or berries or whatever takes your fancy!
