Yields: 6 - 9 Muffin Cakes


  • 1 cup self-raising flour
  • 1 cup rolled oats
  • 1/3 cup brown sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon mixed spice
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 75 grams butter
  • 1 egg
  • 1 cup grated apple
  • 1 cup milk


  1. Measure the dry ingredients into a mixing bowl, mix together well with your fingers to ensure that the oats and brown sugar are mixed together evenly.
  2. Melt the butter until liquid, then add the egg and half the milk and beat with a fork until mix.
  3. Next add the grated apple to your wet ingredients, working in quickly to stop the apple from browning, if you have time you can stew your apples and add them to the mix for extra flavour.
  4. Add the apple and liquid mixture to the dry ingredients and mix, just enough to dampen the ingredients, adding as much on the remaining milk as needed.
  5. Place cup cake bake cups into the muffin pan and divide the mixture between them, top the mixture with a sprinkle of cinnamon and brown sugar.
  6. Bake in a preheated over at 200oC for 12 - 15 minutes or until your muffin cakes are golden brown and sping up when pressed. Remove muffin cakes, and leave to cool on a wire rack.

      Apple and Cinnamon are one of my all time favourite flavours and smells. The oats are a nice addition too. I am definitely making these next time I am baking. I can tell they are going to taste great just by looking at the pics.
