Apple/Cheese\ Quesadillas Recipe

I was watching Foodnetwork, as I always do and they were making these Quesadillas. Looked so good but I was in the middle of baking apple pies for tomorrow THANKSGIVING DAY so I couldn't try them myself.

Cooking for ONE, well even two can be a real problem when you are used to cooking for many, and I am having this problem for sure. I love to cook and bake, in fact I helped make the Farmer's Market we have here , come about...yes I did...many mornings up at 5 just to get my Free (then) spot in the churches parking lot. But that is a whole story in itself...LOL I need to give you this recipe....

 Easy quick and good. (makes two)

4 tortillas...any kind you prefer

1 green crisp apple. sliced thin (peeled or not)

cheese...shredded or sliced..Cheddar, Jack, mozzarella, gouda or any semi soft melting cheese you like. Actually in this presentation they used 2 different kinds.

Place your cheese/cheese's on one of the tortilla's, then place sliced apple on top of the cheese, making sure when you place in your pan the cheese side is on the bottom, that way it melts better.

 In a hot iron skillet, or any good pan you have put some butter mixed with olive oil (optional of course) , place the second tortilla on top of the one in the pan, and cook to your satisfaction.

 Halfway done? Please turn over carefully...

hints: you can add cinnamon, nutmeg, nuts any thing that turns you on...this is the fun in cooking...experiment...

      Your tortilla sounds like it would be delicious. A pples and cheese are great together. There's noting better than a slice of warm apple pie with a slice of cheese melted on the top. I hadn't heard of the combination until I was an adult but I am happy I did.
