Artichoke Chicken Thighs

I really love chicken to me it is one of the best tasting things I ever tasted, but the the tastiest of all the chicken is the thigh not only is it juicy but it's tender as well. Most people love the breast over any other piece chicken so did I until I replaced my breast with a thigh when I was making a chicken Dijon dish, It really blew my mind that the taste was so much better .........At first I thought it was a fluke but when I tried it again it was great but you do not have to believe me all you have to do is try this tasty Artichoke Chicken Thighs and when you do your going to love it believe me.

To begin this recipe I want you to get out the crock-pot because this meal is one that you can set it and forget it. Then enjoy !


1/4 cup of Dijon mustard

3 tablespoons of chopped garlic

1 teaspoon of dried tarragon

3 pounds chicken thighs (about 9 to 10), skinned

1 cup chopped onion

1 cup sliced shakite mushrooms

1 jar (12 ounces) quartered marinated artichoke hearts

1/4 cup of chopped fresh parsley


Combine mustard, garlic and tarragon in large bowl. Add chicken thighs and toss to coat. Transfer to crock-pot slow cooker.

Add onion, mushrooms and artichokes with liquid. Coiver, cook on low 6 to 8 hours or on high 4 hours or until chicken is tender. Stir in parsley just before serving.

I usally cook a nice lomain or fettuccine pasta with this dish and I add use the sauce that the chicken was cooked in to toss the pasta, the sauce really has the taste of the artichokes and is really great tasting.
