Avocado And Rucola Salad Recipe
- 100g rucola leaves
- 100g spinach leaves
- 2 avocados
- 10 cherry tomatoes
- 1 cucumber
3 garlic cloves
- 1 lemon
- olive oil
- salt and pepper
Cooking time: 15 min.
Wash the rucola and spinach leaves. Let them dry for a little while. Cut the cucumber in pieces and tomatoes in halves. Peel the avocado, then cut it in pieces. Put the cucumber, tomatoes and avocados in the salad bowl and add the dried leaves.
The salad dressing: Squeeze the juice out of the lemon and put it into a separate little bowl. Grind the garlic either with a knife or use blender. Add the olive oil, salt and pepper. Mix thoroughly. Make sure the salt has dissolved. Pour the dressing over the salad and gently mix it in.
This is a nice, healthy, low fat and very easy to make vegan salad recipe. Rucola is also known as garden rocket salad or arugula. It is rich with the vitamin C and potassium. Optionally one can add white cheese (mozzarella, feta or similar but then the recipe won't be vegan anymore) or soya cheese to enrich the recipe with protein. Avocados are also a source of potassium and they are rich with the vitamins B, E and K.
