A Rose Recipe:Avocado Lover's Dip
So easy, a college student can do it
2 large tomatoes, diced
1 large avacodo, diced
1 medium oniom, diced very small
1 can of black beans (drained)
1/4 tsp salt
1/2 tsp pepper
1/4 cup lime juice/ or the juice of 2 limes
4 tbls cilantro chopped finely
The best way to chop cilantro is to seperate the leaves from the stems into a pile. Take the pile and roll it and chop it up. Do this a few times until the cilantro is chopped up finely then add to the bowl.
Mix it all in a bowl and open a bag or two of chips. For extra spice, you can add 2 tsp of hot sauce and mix it in.
Update: 4/11/2011 - Have an avocado tree and want to try to save the avocados? Cut the avocado in half and scoop out the flesh with a spoon. Mix in 1/4 tsp of lemon for each cup of avocado, mix well and then use an ice cream scooper to make round balls of the mix. place the round balls in a tupperware container and ziploc bag and freeze. I have also placed the mixture in ice cube trays and then once the cubes froze moved them to a tupperware container and ziploc bag and back into the freezer. Now when you want yummy avocado paste, just pull one or two out and allow them to come to room temperature before using!
