Bacon & Greens soup

What is better on a cold winter day than a bowl of hot hearty soup? Here is one that I invented for just such a day. It is also a tasty way to get some dark leafy greens.



Bacon & Greens Soup

(an original recipe by Alice Olsen)

Cut three strips of bacon into small pieces. Cook them in the bottom of the saucepan until done. Take them out and reserve for later.


Into the drippings put two large yukon gold potatoes and one large sweet onion chopped. Stir and cook on medium heat until the onion is limp.

Add 4 cups chicken broth, 1/2 sweet red or orange pepper chopped and greens sliced (kale, collards, or other dark leafy greens). Bring to a boil and then simmer.


Cook until nearly done and then put the bacon back in along with several twists of fresh ground black pepper and 4 shakes of nutmeg

Makes 6 cups of soup.
