Baked Fish With Rice and Broccoli

Yields: Serves two servings

Ingredients

  • 3 1/2 cups Chicken Bouillon
  • 1/2 cup Rice, Uncooked
  • Paprika
  • 1 TBSP Lemon Juice
  • 3 Pollock Fish
  • 10 oz Frozen Broccoli, Chopped thawed
  • 1/2 cup Shredded Cheese

Instructions

  1. In a bowl, make the chicken bouillon mix. In a 8 x 12 dish, mix the rice and the bouillon mix together. Bake in oven, uncovered for 10 minutes. Take out of the oven and top with broccoli. Place the fish on top then drizzle the lemon juice an add the paprika. Bake covered for about 25 minutes. Take out of oven and top with cheese. Bake for 5 more minutes.
  2. Preheat oven at 375 degrees.

Because all ovens are different, the minutes may differ. I used a toaster oven so it took about an hour for it to bake. But when it was done, it was delicious and my husband loved it. The great thing about this recipe is that you can add or take off any ingredients to make it your own. Since I love paprika, I just put a lot of it on my fish. My husband loves lemon juice so I made sure it was included. Hope you like this recipe and try it.

      All my favorites in one dish. I would prefer mozzarella for my cheese. I love how stringy it is when melted. Not only this recipe is delicious but also healthy. Thanks for sharing!
