Recipe: Super Simple Baking Powder Biscuits

This is my go-to recipe when I want something simple I can cook in a hurry.
These biscuits are tender and moist, and they go equally well with chicken and gravy at dinner, or spread with butter and jam for a morning snack.
I also like them crumbled up, topped with fresh-sliced strawberries and milk for breakfast.
- 4 cups all-purpose flour
- 6 teaspoons baking powder
- 1 1/2 teaspoons salt
- 1/2 cup oil
- 1 1/2 cups milk
- Mix together 4 cups flour, 6 teaspoons baking powder, 1 1/2 teaspoons salt.
- Add the oil and milk, stir it well.
- Dust a clean countertop with flour [I often use whole wheat for dusting, just to add a little flavor]. Form the dough into a ball, and roll it out until it's about 1/2 inch thick.
- With a biscuit cutter, or the top of a cup, cut out your biscuits. When you run out of room to cut, re-roll the remaining dough scraps. Form the last one by hand, using the last of the dough.
- Bake on a biscuit pan or cookie sheet for 15 minutes at 425F, or until golden brown on top.
Mix together flour, baking powder, and salt first, stirring well.
Add in the milk and the oil, and stir to make a thick dough. With your hands, form it into a ball. Dust a clean counter top with flour [all purpose or whole wheat, your choice] and roll it out into a layer about 1/2 inch thick.
With a biscuit cutter or the top of a cup, cut your biscuits from the dough. When you run out of dough to cut, form all the scraps into a new ball and roll it out again. Repeat until you've only got enough left for one biscuit, and shape that on by hand.
Arrange your biscuits on biscuit pans or cookie sheets. They can be pretty close together, but don't let them touch. Bake in a [preheated] 425F oven for 15 minutes, or until golden brown on top.
Take them from the oven, and serve. Butter them, smother them with jam, dip them in gravy [but not all at the same time!] - and devour them.
