Banana Nut Muffins

Yields: 1 dozen muffins


  • 1 1/2 cups all-purpose flour
  • 3/4 cup mashed banana
  • 1/2 cup chopped walnuts
  • 1/2 cup milk
  • 1/3 cup sugar
  • 1/4 cup cooking oil
  • 1 beaten egg
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt


  1. Preheat your oven to 400 degrees Farenheit.
  2. Grease the twelve cups of a standard muffin pan. (Do not use paper bake cups to line the pan, because these muffins will stick to the paper.)
  3. In a medium bowl combine the flour, sugar, baking powder, and salt. Form a well in the center of this dry mixture, and set the bowl aside.
  4. In another medium bowl combine the mashed banana, chopped walnuts, milk, cooking oil, and beaten egg. Pour this mixture into the well which you've formed in the dry mixture bowl, and stir with a wooden spoon just until everything is moist (your batter should be lumpy at this point).
  5. Fill the greased cups of your muffin pan 2/3 of the way full with the batter. Place the pan in your preheated oven, and bake the muffins until golden (approximately 18-20 minutes)
  6. Allow the muffins to cool on a wire rack in the pan for about 5 minutes prior to serving. Enjoy.

Quick Tips:

  • Try using an ice cream scooper to easily divide the batter, and fill the muffin pan cups. An ice cream scooper with about a 4 tablespoon volume will work nicely for standard size muffins.
