Salads - Good anytime of the year.

Salads are one of those terrific foods that are good anytime of the year. When you add meat to them, they become satisfying, delicious meals. Beef has been finding it's way into salads more and more lately. And why not? When you add a piece of steak to a salad it becomes a power food to help you on your way to losing weight. Ground beef is very versatile when it comes to salad making. There's nothing you can't add to a steak or ground beef salad. Who doen't love a good taco salad. Now's the time to start gathering up your fresh veggies and adding that leftover steak or that little piece that you have that you didn't know what to do with. Make those beef salads and enjoy.

Steak Salad

12 oz beef sirloin steak

2 tbsp olive oil

1 tbsp red wine vinegar

2 tsp lemon juice

1/2 clove garlic, minced

1/4 tsp salt

1/8 tsp ground black pepper

1/2 tsp Worcestershire sauce

1/4 cup crumbled blue cheese

3 1/2 cups romaine lettuce

1 tomatoes, sliced

1/2 small green bell pepper, sliced

1 carrot, sliced

3 tablespoons sliced red onion

1 tablespoon sliced pimento-stuffed green olives


Preheat grill for high heat.

Lightly oil grate. Place steak on grill and cook for 3 to 5 minutes per side or until desired doneness is reached.

Remove from heat and let sit until cool enough to handle. Slice steak into bite size pieces.

In a small bowl, whisk together the olive oil, vinegar, lemon juice, garlic, salt, pepper and Worcestershire sauce.

Mix in the cheese. Cover and place dressing in refrigerator.

Arrange the lettuce, tomato, pepper, onion and olives on a dinner plate. Top with steak and drizzle with dressing.

Serve with crusty grilled French bread.

Makes 2 servings.

Layered Taco Salad

Ingredients for:


1/2 cup packed fresh cilantro leaves

1/2 cup olive oil

1/4 cup fresh lime juice

1 tbsp packed brown sugar

1 tbsp chili powder

1 tbsp beef bouillon

1/4 tsp ground cumin

1/4 tsp ground black pepper


1 1/2 lb lean ground beef

1 onion, chopped

3 cloves garlic, finely chopped

1 jalapeño, seeded and cleaned, chopped

2 tbsp olive oil

1 tbsp chili powder

1 tbsp beef bouillon

2 tsp ground cumin

1/4 tsp ground black pepper

1 (8-ounce) can tomato sauce


8 cups chopped iceberg lettuce

2 cups (8 oz) shredded cheddar cheese

1 (15-oz) can black beans, rinsed and drained

1 large tomato, chopped

1 (3.8-ounce) can sliced, pitted black olives, drained

1 avocado, pitted, peeled and diced

For Dressing: Place cilantro, oil, lime juice, sugar, chili powder, bouillon, cumin and pepper in blender; cover. Blend until combined.

For Beef: Cook beef, onion, garlic, jalapeño, oil, chili powder, bouillon, cumin and pepper in large skillet over medium-high heat, stirring occasionally, until beef is no longer pink and onion is soft. Stir in tomato sauce; heat through.

To Assemble: Spread lettuce on large platter. Top with beef mixture and continue making layers with cheese, beans, tomato, olives and avocado. Drizzle dressing over salad or serve on the side. Serve immediately.

Makes 8 servings.

Steak and Spinach Salad


8 oz steak, cut into thin slices

2 tbsp soy sauce

2 tbsp olive oil

1 clove garlic, minced

black pepper, to taste

1/2 lb mushrooms, sliced

1 bag of fresh baby spinach leaves

12 - 15 grape tomatoes, halved


4 tbsp balsamic vinegar

1 1/2 tsp spicy brown mustard

2 tsp lemon pepper

1/3 cup olive oil

Crumbled blue cheese


Place steak, soy sauce, 1 tbsp of olive oil, garlic, and pepper in a bowl and marinate for at least 15 minutes.

Warm a frying pan on medium high and add contents of bowl. Stir constantly until meat in no longer pink.

Drain steak and transfer to a plate, set aside.

Add other tbsp of olive oil to pan, add mushrooms and saute for about 5 minutes.

In a large salad bowl, mix together spinach leaves, steak, grape tomatoes, and contents of pan.

Whisk together ingredients of dressing and pour over contents in salad bowl.

Toss lightly, toss a handful of crumbled blue cheese and enjoy.

Makes 4 servings.
