Homemade Chicken Pot Pie Recipe

One of the most challenging tasks I have as a busy mom is getting a healthy meal on the table FAST. Our days are hectic and sometimes I just don't have time to plan ahead. It's important to me that my kids get a healthy meal and I'm always looking for creative ways to increase vegetable servings.

This homemade Chicken Pot Pie recipe is easy, delicious and chock full of veggies. With only 15 minutes of prep time, you'll have this in the oven and baking in a flash!

Homemade Chicken Pot Pie Recipe


This super simple Chicken Pot Pie recipe has a light and fluffy crust oozing with cheese!


PREP: 15 Minutes Bake: 40 Minutes 6 Servings


Heat oven to 375 degrees.

Homemade Chicken Pot Pie Recipe

For the crust:


2 cups shredded Cheddar cheese (8 ounces)

1 cup Bisquick Original baking mix

1/4 cup milk

1/4 teaspoon dried thyme leaves

2 eggs


Stir crust ingredients with fork until blended.

For the Filling:


1 bag (16 ounces) frozen mixed vegetables

1 cup cut-up cooked chicken*

1 jar (12 ounces) chicken gravy


Heat frozen vegetables, chicken and gravy to boiling in 2-quart saucepan, stirring fequently; keep warm.


* Here's a great way to use up leftover chicken!

Pour chicken and vegetable mixture into an ungreased 2-1/2 quart casserole.  Spoon crust batter over chicken mixture and spread gently to cover.  Bake uncovered 35 to 40 minutes or until crust is golden brown.  Let stand 5 minutes before serving.

Homemade Chicken Pot Pie Recipes


Variations:


Substitute leftover turkey for the chicken and use turkey gravy.

Substitute beef and beef gravy for the chicken.

Try different combinations of frozen mixed vegetables.

Use a pepper-jack cheese in the crust mixture.

You could even leave out the meat and make a vegetarian pot pie.

Make individual pot pies in small ramekins or oven-proof bowls.


What's a Pot Pie?


"Potpie....A crusted pie made with poultry or meat, and, usually chopped vegetables. The term, which first appeared in American print in 1785, probably refers to the deep pie pans or pots used to bake pies in, and it has remained primarily an Americanism. The most popular pot pies have been chicken, Beef, and pork. The first frozen pot pie was made with chicken in 1951 by the C. A. Swanson Company."

    Lamme. Hi. This is a wonderful recipe, so quick and easy to prepare and healthy as well, We do like the Fluffy Crust idea, but looks a lot different to Flakey Pastry, and most of the veges in one packet that's even better.
