The History Of Chili
I started cooking chili over forty years ago and since then I guess I've made tens of thousands of gallons of chili. And in that time period I've cooked chili that was eaten and enjoyed by everyone from President Jimmy Carter to members of the British Royal Family.
I make chili all kinds of ways and while I have some favorite recipes of my own including some I will share below I am constantly looking for new chili recipes and new ways to make chili. I love chili with beans but I also love a really good bowl of Texas chili known as a bowl of red and in Texas they don't put beans in chili.
Most people agree that the first chili ever made was probably made out on a Texas cattle drive by an old chuck wagon cook to use up the tougher cuts of beef. The best bowl of Texas chili I ever tasted was made by a man in El Paso Texas out of cubed beef brisket cooked long and slow for about 12 hours out side over an open fire.
Way back in the early 1800's chili was made out of dried beef, suet, dried chili peppers and salt that were pounded together into bricks and a portion of that brick could be cut off and made into a pot of chili. I've tasted chili made from a product similar to this and it was delicious.
It was not until the 1893 World Exposition held in Chicago Illinois that people from all over the United States got to eat chili at the San Antonio Chili Stand. After that the rest is history. Before you knew it chili had spread all over the United States and the rest of the world. And as it spread around the United States people began to give it their own unique flavors and somewhere some people say in the Carolinas beans were added to chili and the great chili dispute was born.
Ever since then people have had a long running argument going on. Should chili have beans or should it not. In different parts of the United States you'll find chili served with beans and with out beans.
Best Ever Chili Recipe
Here is a chili that you can start in a skillet and finis in a crock pot or slow cooker. You will need to brown your hamburger and drain it very well. While your browning your ground beef you'll want to add your celery, onions, bell peppers, and your jalapeno pepper and cook them to while the hamburger is cooking.
Remove The Jalapeno Seeds For Less Fire In Your Chili
I cut the stem off the jalapeno pepper and then I split it in half and wash the seeds away. Then I dice it fine and add it to my hamburger. I dice my celery, onion, and bell pepper into very small pieces. I try to dice all my vegetables rather small and I try to do them all about the same size. I then add them to my ground beef and let them cook while the ground beef is browning. My garlic also goes in the skillet with the veggies and the hamburger.
Here I'm going to tell you a valuable secret when your making chili. Use the cheapest hamburger possible if you want your chili to have the best flavor. If you buy the more expensive ground beef or ground chuck you won't have the flavor you'll have with the cheap hamburger.
Ingredients For The Best Ever Chili Recipe
1. Two Pounds Ground Beef.
2. One Large Jalapeno With Stem Removed Split In Half Seeds Washed Away And Diced Fine.
3. One Cup Each Fine Diced Bell Peppers, Celery, And Sweet Red Onion.
4. Two !4-15 Ounce Cans Red Kidney Beans Washed And Drained Well.
5. One 22 Ounce Can Diced Tomatoes And The Juices In The Can.
6. One Tablespoon Minced Fresh Garlic.
7. One 6 Ounce Can Tomato Paste.
8. One Tablespoon Ground Sea Salt.
9. Two Tablespoons Chili Powder.
10. One Teaspoon Ground Cumin.
Now you will want to start by browning your hamburger in a large skillet and you'll want to add your bell pepper, jalapeno pepper, onion, celery, and garlic to the ground beef and cook everything until the ground beef is brown. Once the hamburger is brown drain the hamburger being careful not to lose any of your veggies and then pour the contents of this pan into a large crock pot or slow cooker.
At this time you can add all the rest of your ingredients and set the crock pot on high. Cook for eight hours being sure to stir your crock pot about every two hours and if it clearly is to thick add a cup of water at a time until your chili is done. It should be thick and smell oh so delicious when it is done.
I serve this chili over squares of corn bread in bowls and I set up bowls of shredded cheddar cheese, sliced jalapenos, sour cream, and guacamole so everyone can add what they want to their bowl of chili.
This Is A Great Chili For A Slow Cooker Or Crock Pot
This is truly one of the few chili recipes that I've ever found that works really great in a crock pot or slow cooker. If your crock pot or slow cooker cooks hot you'll need to keep a eye on the crock pot to make sure it doesn't get to thick and dry out. Never add but a cup of water at a time and stir the water into the chili.
I bet you won't believe how good this chili really is until you cook it and give it a try. To me it is truly one of the best pots of chili I've ever tasted. When you make it let me know what you think. If you want more fire in your chili add in another large seeded jalapeno pepper.
Chili Ready In Thirty Minutes Or Less
Here's a great chili that you can have ready on the table in thirty minutes or less and it has a wonderful flavor your sure to love. Just follow the very easy instructions and I would almost bet you'll be surprised at how great this chili does taste.
1. One Pound Ground Beef.
2. One Half Cup Sweet Red Or Purple Onion Diced Fine.
3. One Tablespoon Chili Powder.
4. One Large Can Pintos Washed And Drained.
5. One 14 - 15 Ounce Can Diced Tomatoes.
6. One 8 - 10 Ounce Can Tomato Sauce.
7. One Cup Apple Cider Or Apple Juice.
First of all put your ground beef and onion on in a pan and cook until the beef is brown and the onion is done. Drain well.
Now add all your ingredients to a large sauce pot and simmer on medium for thirty minutes. You just made one of the easiest and most delicious chili's you'll ever eat. Give it a try to see what you think.
A Note About Ground Beef
You will find that the cheaper ground beef will have much more flavor than the more expensive ground beef. If your making chili always use the cheaper ground beef and then drain your ground beef well before you use it in your chili.
White Chili Recipe
Here is one of the best recipes for White Chili that I've ever found. I use chicken thighs that I've removed the skin and bone from but you can use chicken breast if you want to. I like to use chicken thighs in a lot of dishes I make because they are about one third the cost of chicken breast.
White Chili Ingredients
1. Two Cups Cooked Chopped And Diced Chicken Thighs.
2. One 12-14 Ounce Can Whole Kernel Corn.
3. One 15-16 Ounce Can Great Northern Beans.
4. One 15-16 Ounce Can Butter Beans.
5. One Tablespoon Vegetable Oil.
6. One Cup Fine Diced Red Sweet Onion.
7. Two Tablespoons Fresh Minced Garlic.
8. Four Cups Chicken Broth.
9. Two Tablespoons Chopped Fresh Cilantro.
10. Two Tablespoons Lime Juice.
11. One Teaspoon Ground Cumin.
12. One Teaspoon Ground Oregano Leaves.
13. One Level Teaspoon Ground Cayenne Pepper.
14. One Teaspoon Ground Sea Salt.
15. One Teaspoon Chili Powder.
Cook your onions and the garlic in a large skillet and then put all your ingredients into a large stock pot and turn the heat up to medium but no hotter. You want to cook on medium for about one hour and then reduce the heat to simmer for another 45 minutes. If you think your white chili is getting to thick add another cup of chicken broth.
I serve the White Chili in a bowl over a big square of cornbread and then I sprinkle the top of the chili with shredded Mexican cheese and a few sprigs of chopped cilantro.
I usually offer sour cream, sliced jalapenos, diced tomatoes and diced onions on the side so people can add what they want to their white chili.
I think this is one of the best White Chili Recipes that I've ever made and tasted. Served over corn bread with the various toppings and you have one of the best bowls of White Chili you'll ever eat.
Green Chili Recipe
Green Chili is made with pork and various other delicious ingredients. In the southwestern United States the Green Chili is usually served over burritos with rice on the plate. The plate is often garnished with sour cream, guacamole, diced green onions with tops, and diced tomatoes. Fixed this way Green Chili is one of my favorite dishes and I make Green Chili often.
Green Chili Ingredients
1. Two Pounds Pork Roast Trimmed Of Fat And Cut Into Small One Inch Cubes.
2. Four Tablespoons Vegetable Oil.
3. Two Tablespoons All Purpose Flour.
4. One 4-5 Ounce Can Green Chilies.
5. Two Jalapeno Peppers With Stems And Seeds Removed And Diced Up Fine.
6. One Cup Red Sweet Onion Diced Fine.
7. One Six Ounce Can Tomato Paste.
8. Four Cups Chicken Broth.
9. One Tablespoon Chili Powder.
10. One Teaspoon Ground Cumin.
Here again we have a recipe that can be cooked in a crock pot or slow cooker but you need to first cook your onions, jalapenos, and garlic in a skillet until they are done and set aside.You'll use two of the four tablespoons of vegetable oil to cook your onions, jalapenos, and garlic in.
In a clean skillet add a couple of tablespoons of vegetable oil and then toss your pork cubes in the flour and after they are coated brown them in the skillet. Cook the pork cubes slowly and turn them only when you have to so the flour stays on the pork cubes.
Now you'll want to add all the ingredients to your crock pot or slow cooker and cook on high for six hours. About once an hour stir the pot up from the bottom. You'll want to check your meat after six hours on high to see if your meat is cooked and tender. If it is your fine. If not let it keep cooking until your meat is done and very tender.
Homemade Green Chili, Burritos, And Hot Buttered Rice
I make this Green Chili often and then I buy beef burritos from the frozen food section at the grocery store and heat them up by the package directions. I cook a pot of hot buttered rice to have on the plates also. I put down two of the burritos on the plate and on the other side of the plate I put a serving of hot buttered rice. I cover the burritos with the Green Chili and then I put a spoon of sour cream and a spoon of guacamole on top of the chili. I then sprinkle the top of that with a few diced green onions with the tops included and a few diced tomatoes. I end up with one of the most delicious Green Chili meals you'll ever eat.
Homemade Green Chili, Scrambled Eggs, And Fried Potatoes For Breakfast
Some people like to scramble eggs up at breakfast and fried potatoes with onions. They put the scrambled eggs on one side of the plate and fried potatoes on the other side of the plate. You put a big spoon of Green Chili on top of the scrambled eggs and sour cream and guacamole on top of the chili. Diced green onions with the tops included and diced tomatoes go on top of that and you have one of the best breakfast meals you'll ever eat. I often fry flour tortillas golden brown to go with the green chili and eggs breakfast. Believe me it is so good.
For my fried potatoes I wash the potatoes and then fine dice the potatoes with the skin on the potatoes. I dice up a little sweet red onion with them. And often I'll dice up one seeded jalapeno into the potatoes and onion. I fry the potatoes slowly in a little vegetable oil until they are cooked and golden brown. They are so delicious cooked this way. You can add salt and pepper to taste on them. In the American Southwest potatoes are often cooked this way and served at breakfast with eggs and homemade green chili. You won't find a much better meal anywhere. I know I love it.
