When I first went to work as a Chef in Key West Florida it was not long before I noticed all the delicious coconuts growing all over the island and it wasn't long before I was trying to figure out ways to use the coconuts in my cooking.

Best Ever Coconut Cream Pie
Here is one of the best ever coconut cream pie recipes. This is one of the best old fashioned coconut pies that I have ever tasted and I have worked for years trying to perfect it. I toast the coconut that I use on top of the pie but you have to be careful when your toasting your coconut not to burn it. You want to spread your coconut out on a flat baking sheet and you want to place it into a 350 degree oven for 7-9 minutes being sure to keep your eyes on your coconut often and you will need to stir it often to be sure it browns even and that you don't burn it.
For Your Best Ever Coconut Cream Pie Recipe You Will Need
1. 3 Cups Heavy Cream.
2. 2 Large Whole Eggs.
3. 3/4 Cup Of Granulated White Sugar.
4. 1/2 Cup All Purpose Plain Flour.
5. 1 Teaspoon Salt.
6. 1 Cup Fresh Frozen Coconut.
7. 1 Teaspoon Vanilla Extract.
8. 1 9 Inch Pie Shell Unfrozen And Thawed In Metal Pie Shell.
9. 1 Cup Frozen Whip Topping Thawed.
In a medium saucepan you will want to combine your heavy cream , eggs , sugar , flour and salt. Bring to a boil stirring constantly. Remove from the heat and stir in 3/4 cup of the coconut and the vanilla extract. You will want to prick your unbaked pie shell all over with a fork and then stir up your coconut mixture well and pour into your pie shell. Smooth the top out with the back of a spoon and refrigerate for four hours.
When your four hours are up toast the remaining 1/4 cup of coconut following the above instructions. Top your chilled coconut pie with the cup of whipped topping and then the toasted coconut. You can now cut into slices and enjoy. And you have now made the best ever coconut cake.
