Contrary to popular belief, the Key Lime is a specific variety of the fruit and not limes that are grown in the Florida Keys. The Key Lime is much smaller than the standard or "Persian" lime that you may be used to. It's usually the size of a golf ball, maybe a little larger, with green-yellow smooth skin, while Persian limes are larger with a rough, deep green skin.

The juice of the limes can serve many purposes. Since it is a citrus fruit, its tangy taste is a great complement to the sweetness in many desserts. The acidity of the juice is also a perfect ingredient for a marinade to help tenderize tough cuts of meat. And as you will see in the ceviche recipe (below), it can also cook seafood without using any heat.

Shrimp Ceviche - if you've never had Ceviche, you have got to try this dish. Ceviche is raw seafood marinated in citrus juice. The acid in the citrus actually cooks the seafood. It is quite often served in small portions as an appetizer, or as a brunch or lunch main dish.

Ginger-Lime Swordfish - Fresh ginger, honey and lime make a heavenly trio for this marinade. When you start cooking the fish, pop the residual marinade into a saucepan, simmer while the fish is grilling and spoon a little over the cooked fish. This recipe also works well with Mahi Mahi.

Tequila Lime Chicken - Ina Garten certainly had her priorties in order when she combined lime juice, tequila, jalapenos and garlic to make this succulent chicken dish. While it takes very little time to make, be prepared because it needs to marinate overnight.

Cubed Beef with Lime Sauce - This Cambodian dish combines soy, lime juice and garlic to make an unlikely but delicious combination. If you have trouble finding Mushroom Soy Sauce in your grocery store, you can purchase some here.

Cucumber-Lime Smoothie - The cucumber definitely adds a refreshing note to this cold lime smoothie. Cut back on the sugar a little to retain more of the lime's tartness.

Key Lime Pie - Contrary to popular belief, Key Lime Pies are not green in color. They get their flavor from the juice and rind which, on a key lime, is not green. Be sure to top this with some fresh whipped cream for a taste which will have you craving more.

      Decided to throw a lime party with a 3 course meal obviously containing lime as the key ingrediant, this will mostly be based around seafood as we have decided to go prawning, crabing & fishing for our ingrediance. Will definitely use some ideas from here. Thank you!

      Hiya! Looks delicious.First one that I will try is the Caipirinhac coz it's simple. My neighbour has a lemon tree and we're always full of lemons in the house. Not to much to ask for lemon recipes?? :) :)
