Blind Hog BBQ

On a quiet weekday Fourth of July late morning in the sleepy little town of Tipton, a new business has opened and is already starting to serve a slow but steady eager lunch crowd. A cute small red barn of a food trailer has opened for the day, and the owner Adam Libbert is busy putting out signs on the side of Highway 5 to attract the steady stream of traffic that is buzzing through from Kansas on the way to their lake homes. Adam and his son Jonathan have the smokers loaded with the day's offerings, plus the preorders that he has received for racks of pork ribs for folks celebrations that evening. Adam started accepting preorders for ribs last week and had quite a few by the deadline on Monday. Jonathan is Adam's 13-year-old son who is already showing initiative in the food industry and serves a very mature and capable drive up window.

Adam is a veteran of the bbq smoker. Formerly offering a food trailer in California, and then later a storefront restaurant, Adam now is a chef at a prominent restaurant in Jefferson City for the breakfast shift. Getting up very early to make sure his loyal diner customers are taken care of, he then drives back home and gets the smoker going for the evening's bbq lovers of Tipton and the surrounding areas.

Although the menu changes a little due to availability, most days smoked pulled pork and brisket, are featured as well as Adam's signature pork steak. Racks of ribs are offered on a limited basis. He will have signs up the day's ribs are available. So how is the food? One word-delicious. I had a sampler plate and the brisket was fresh, moist, and fall apart tender. The pulled pork was amazing, and the pork steak was my favorite. I know why he calls it his signature pork steak, the best I've ever had. The bean side dish I can only describe as superior, being between baked beans and cowboy beans, sweet and tangy.

Blind Hog BBQ is open weekend evenings from 4:30 to 7:30 pm Friday through Sunday. They are available for special events and catering on a limited basis. They can be found online at facebook.com/blindhogbbqstand.
