For the blondies
- 1/2 teaspoon salt
- 1 large free range egg
- 1 cup all-purpose flour
- 1/3 cup granulated sugar
- 1 teaspoon ground ginger
- 1/2 cup packed light-brown sugar
- 1/2 teaspoon pure vanilla extract
- 2 tablespoons candied/glace ginger, chopped
- 115 g (4 oz) butter, melted and cooled, plus more for pan
For the roasted rhubarb
- 1/4 cup sugar
- Grated zest of 1/2 a lemon
- 1 bunch rhubarb, chopped into 1 inch (2 cm) thick pieces
Preheat oven to 400 degrees F (200 degrees C). Place the rhubarb in a baking dish, sprinkle with the sugar and zest and mix well. Set the rhubarb aside for about 5-10 minutes for the sugar to penetrate. Cover the baking dish with a sheet of foil and roast for about 10-15 minutes, checking to ensure the sugar has melted. - 1/2 teaspoons fine salt
- 1 teaspoon baking powder
- 225 g (8 oz) plain flour
- 50 g (2 oz) demerara sugar
