Craving the perfect cheese bread

When Brazilian Junea Rocha and her husband Cameron moved from Belo Horizonte, Brazil to Portland, OR, they missed their favorite snack food - Pão de Queijo.

Growing up this warm breakfast item and afternoon snack was served at home, at parties and celebrations. Not able to find this cheese bread in the states, Juena called home and asked for her mother's recipe.

What makes this type of cheese bread different than any type in America is tapioca flour. This type of flour is made from a yuca root and is gluten free. The recipe also called for eggs, milk and fresh cheese. Since Junea couldn't find the right Brazilian cheese, she subsituted the flavors combining cheddar and parmesan to make Brazi Bites.

Appearing on ABC's Shark Tank

After making hundreds of batches in their home kitchen, and sharing them with friends, they entered these unique cheese bites in food and trade shows across the U.S. All their hard work paid off, especially in November, 2015 when they became a television stars sharing their enthusiasm and story on ABC’s Shark Tank. Over 9 million viewers watched this adorable couple present Brazi Bites to Mark Cuban and the gang.

After one bite, The Sharks fell in love with the product and soon their cheesy bread bites were stocked in grocery stores (Vons, Albertsons, Ralphs, Sprouts, Gelsons and more). They also became a Costco cult favorite.

From Freezer to Oven

Brazi Bites are great to keep in the freezer and pop in the oven on a cookie sheet for 20 to serve warm. Enjoy them as a side dish, bite-size appetizer, or even dessert. Junea offers recipes on her website for Southwest Avocado Toast, Butternut Squash Hummus Sliders and even pumpkin cheesecake using her Brazi Bites.

Ingredients

  • 10 garlic Asiago pieces, whole
  • 1 avocado, mashed with salt & pepper
  • 2 eggs, beat
  • a knob butter, melt
  • 1/2 lime, squeeze
  • 1/4 red onion, chop
  • 1 tomato, dice
  • 1 jalapeno, dice
  • 1 cilantro sprig, garnish
  • pinch salt & pepper, sprinkle

Instructions

  1. Place Brazi Bites on a cookie sheet and cook for 20 minutes. Flatten when hot.
  2. Beat eggs with salt and pepper in a bowl. Melt butter in a small pan and scramble eggs.
  3. Dice and combine tomatoes, onions, and jalapeños. Squeeze 1/4 of the lime and mix to make pico de Gallo sauce.
  4. Salt and pepper avocado. Add lime juice and mash with a fork in a bowl.
  5. Spread avocado mash on top of the Brazi Bites. Top with scrambled eggs, pico de Gallo and top with cilantro.
