Breakfast Recipes with Kale, Swiss Chard, or Spinach!

Kale is one of those "superfood" vegetables that is surprisingly easy to incorporate into existing dishes. Even with its strong taste, kale can blend well with a variety of flavors and textures. Try out these 4 awesome breakfast smoothies with kale as a main ingredient, or jump down to the fifth recipe for a hearty kale omelette!

Swiss chard and spinach can be substituted into any of these recipes. Just make sure to remove any stringy stems and wash the leaves well prior to use. Eating a little dirt never hurt anyone, but we can try to avoid it for the sake of a tastier meal!

Kale & Pineapple Smoothie

2 cups kale

Half a pineapple

1 cup coconut water/ coconut milk

Garnish with coconut flakes if desired.

1. Blend well.

2. Pour 3-4 large smoothies.

Banana Kale Smoothie

½ cup chopped kale

1 small banana

½ cup Greek yogurt

½ cup skim milk or milk of choice (almond, coconut, etc)

2 Tablespoons unsweetened applesauce

¼ teaspoon cinnamon

½ teaspoon vanilla

1 cup crushed ice

1. Blend well.

2. Pour 3-4 large smoothies.

Kale is Berry Good Smoothie

1 cup raspberries

1 cup strawberries (Or cup of another berry on hand such as blueberries)

1 cup kale

Splash of milk of choice (Skim milk, coconut milk or almond milk)

½ cup Greek yogurt

½ scoop protein powder (I use Pure Protein with scoop contained within)

1. Blend well.

2. Pour 3-4 large smoothies.

Kale Ginger Smoothie

1 cup kale

2 cups pineapple

2 Tablespoons fresh shaved ginger

½ a cucumber

Splash of milk of choice

1. Blend well.

2. Pour 3-4 large smoothies.

Kale with Mushrooms and Onion Omelet

½ cup chopped kale

½ cup chopped onions

¼ cup chopped mushrooms/pieces

4 whole eggs

Splash of milk of choice

Note: Ingredients are per omelet.

1. Sauté chopped kale, onions, and mushrooms until soft and fragrant.

2. Push away to side of pan.

3. Whisk 4 whole eggs with splash of milk.

4. Pour mixture into pan and cook until bottom cooked, place ingredients into omelet.

5. Cook until egg cooked thoroughly.
