Brownies with espresso cream cheese frosting
A while ago, I saw the chocolate cream cheese on sale and bought one just because the price was so low! Of course, it has been sitting in my fridge ever since as I couldn't find a way to use it. Finally, I decided to use it for a simple frosting - it turned out delicious! I spread the frosting over brownies but it would be just as delicious as a filling for any other cake.
I made the brownies recipe from America's Test kitchen:
4 oz. butter
5 oz. semi sweet chocolate
2 oz. unsweetened chocolate
2 tbsp cocoa
1 1/4 cup sugar
1 cup flour
You can make those in one pot: Melt the 4 first ingredients in a pot over low to medium heat. Stir well and take off the heat. Add sugar, flour and eggs to the chocolate mixture and mix well with an electric mixer. Pour the batter into a greased 8" square pan and bake in a preheated oven on 325 degrees for about 35 minutes. Let cool in pan.

- 1 cup chocolate cream cheese, softened
- 1/2 cup icing sugar
- 1 cup whipping cream
- 1 tsp espresso powder
Cream cheese frosting
- Beat the cream cheese with the icing sugar until well mixed.
- Whip the cream with the espresso powder until peaks form.
- Fold the cream into the cream cheese and spread over brownie.
